And live in this sad indoors world of pale/ghostly/fair skinned folks that can’t seem to enjoy the sunshine for 10minutes without resembling a tomato. Yes, this describes everyone in my household and we have about as much chance of tanning as an Eskimo. BUT on a lighter note, we DO love the food that summer brings and all its bright colors and flavors-no sun block needed! 15-Minute Party Corn is definitely one such dish!
With all those bright colors and its flavorful vegginess (uh…yeah spellcheck, that IS a word, c’mon) make a perfect side for those back porch dinners or covered dish for your next grilling get-together! Something magical (oh yes I did) happens when all these fresh ingredients heat up together with a spike of butter and simple seasonings that bring those flavors alive in the yummiest sense.
And do I really even have to talk about the whole 15-minutes and it’s in yo’ mouth thing? No, I think not because that is probably exactly why you are printing this recipe. It’s Friday! You don’t want to be cooking all night! Not to mention, this is the sort of side that is going to make you feel good about eating that big ole’ burger you have already been daydreaming about.

As if you weren’t sold already, this pot of veggie gold is picnic-friendly! It’s good hot, cold or somewhere in between! I have made this the day before and let it set out a few minutes before serving and it was quite the hit.

- 1 bag frozen corn
- 1 red onion
- 1 orange pepper
- 1 green pepper
- 1tbsp butter
- 1 can black beans (drained)
- 1 3oz bag bacon bits (the real bacon, NOT imitation)
- Salt + Pepper (to taste)
- Cilantro (for serving)
- Melt butter in large skillet on medium heat and add diced onion and pepper.
- Allow to cook for 2-3 minutes or until tender.
- Add corn, drained black beans and bacon bits and stir.
- Lower heat and cook for 5-10 minutes or until corn is cooked.
- Season the corn mixture, with salt and pepper and serve with cilantro on top.
