...certainly doesn't stay in Vegas because its all here on the blog to share with you today!

Yep!  We went to Vegas and loved it.  We probably aren't your usual Vegas tourist since we don't drink, gamble or smoke (LOL) but we were left with no shortage of fun in that happenin' city!

We stayed at a place called SLS which is the new Sahara, for those of you that have been there.  We enjoyed the unique atmosphere and tried their Northside Cafe which was open 24/7 and, with finally arriving to our room at 2am, we were very grateful!

By the way, I'll just slap my own hand since I don't think I took but one or two pictures of our delicious food through out the week...bad...BAD food blogger...and both pictures were

Hoover Dam

Circus Circus was literally the MOST fun.  They had an entire theme park in the hotel as well as a ginormous arcade (which we totally killed about two hours in) and circus acts performed every 15 minutes!  It definitely brought the kid out in us!

Let’s chat.

Burgers ALLL-WAYS sound like a good idea to me. It doesn’t matter how often I have had them, there is something about meat between a fluffy buns with ALL the toppings. We don’t have to discuss my love of toppings again…I know.

Y’all get it.

But here at the Honeycomb Headquarters we try to steer clear of the red meat as often as we can just for the sake of health. Not all the time, because there are some days that just call for the authentic BEEFY all American burger. But when you daydream about burgers daily…the doc says no 🙁

Not to fear though! It has caused me to grab that ground turkey and get creative!

This particular cooking sesh was driven by my love for Mediterranean Avocado Hummus and thus Mediterranean Hummus Burgers happened! Oh guys…you will feel like you have walked into a Mediterranean restaurant and ordered a gyro. In fact, Steven’s comment was, “It…tastes like a gyro somehow?!” Ha!

I have been told there is no actual Mexican blood running through my veins, but I have always found that hard to believe. As far back as I can remember I loved every Mexican styled meal my mom ever made. In fact, there was a ‘Rio Bravo’ that was a favorite of my family’s and they had a Kid Coloring program where each child was given a sheet to color and send in. If chosen, ‘Rio Bravo’ would send a personalized letter to your house and give you a FREE MEAL. 0_0


Can you think of better motivation for a 10yr old!? I couldn’t. Because I entered EVERY time we went. And you know what? My sister and I actually won a couple of times! I can still remember standing in the dining room holding my Free Rio Bravo meal certificate in hand and smiling as my parents snapped a picture of that proud moment. Pretty sure their excitement mainly came from the ‘free’ part, but we will leave that alone.

Although the days of Color sheet contests are gone, (total discrimination on adults by the way…I can color with the best of them) and we now have to pay for our own food at restaurants—ah the injustice in the adult world—we find ourselves eating Mexican once a week or more. Often being the ‘more’.   Not at our local restaurant, but in our own kitchen where we also have free chips and salsa. SCORE.

Ahhh summer…the beaches…the sunny afternoons…the pool with your pretty fruity little drink. Such a paradise and beautiful season to get all tan in the sunshine and get that skin glowing!

Or you could be me.

And live in this sad indoors world of pale/ghostly/fair skinned folks that can’t seem to enjoy the sunshine for 10minutes without resembling a tomato.   Yes, this describes everyone in my household and we have about as much chance of tanning as an Eskimo. BUT on a lighter note, we DO love the food that summer brings and all its bright colors and flavors-no sun block needed!   15-Minute Party Corn is definitely one such dish!

With all those bright colors and its flavorful vegginess (uh…yeah spellcheck, that IS a word, c’mon) make a perfect side for those back porch dinners or covered dish for your next grilling get-together! Something magical (oh yes I did) happens when all these fresh ingredients heat up together with a spike of butter and simple  seasonings that bring those flavors alive in the yummiest sense.

And do I really even have to talk about the whole 15-minutes and it’s in yo’ mouth thing? No, I think not because that is probably exactly why you are printing this recipe. It’s Friday! You don’t want to be cooking all night! Not to mention, this is the sort of side that is going to make you feel good about eating that big ole’ burger you have already been daydreaming about.

15-Minute Party Corn

Recipe type: Side Item
  • 1 bag frozen corn
  • 1 red onion
  • 1 orange pepper
  • 1 green pepper
  • 1tbsp butter
  • 1 can black beans (drained)
  • 1 3oz bag bacon bits (the real bacon, NOT imitation)
  • Salt + Pepper (to taste)
  • Cilantro (for serving)
  1. Melt butter in large skillet on medium heat and add diced onion and pepper.
  2. Allow to cook for 2-3 minutes or until tender.
  3. Add corn, drained black beans and bacon bits and stir.
  4. Lower heat and cook for 5-10 minutes or until corn is cooked.
  5. Season the corn mixture, with salt and pepper and serve with cilantro on top.

So I was lying in bed super late the other night (read: 10:30…that’s late right?), not counting sheep, not daydreaming and not planning our next vacation. Nope. That is what normal people do. I, on the other hand, was dreaming up Toasted Mediterranean Avocado Hummus.

Before you get all impressed with my dedication to this blog, I need you to know I had selfish intentions. First of all, I love BREAD. Because all carbs basically whisper my name 100% of the time (blessing and curse), but also because it has been a hot minute since I had any type of toast in my life. I KNOW. What kind of person doesn’t have toast on a regular basis? Me. I am that person.

So, the toast, THAT was definitely happening, but I couldn’t decide what delicious spread was going to reunite me with that golden toast. I knew I wanted to pile on ALL.THE.THINGS. because if this wasn’t a dead giveaway I tend to go just a bit overboard on toppings. So before the internal debate had gotten too intense, a light bulb went off, and my glorious kitchen bestie, the FOOD PROCESSOR, appeared in my head…angels singing and all! Hummus was definitely the answer to my toppings conundrum and the spread to unite me with my long lost craving of toast.

Those lovely chickpeas all cozy next to my favorite, the avocado, as well as a touch of the salty—feta and Kalamata olives—and some fresh staple ingredients blend into a dense spread fit to withstand endless toppings!

This hummus had Steven and I “mmmmm-ing” the whole time we hovered over the bowl like animals sat at the table like the classy adults we are and tried all the combinations of toppings we could think of!

Spoiler Alert: They’re ALL good.

Go raid your pantry of all the yummy things and get that buffet ready for a Mediterranean Avocado Hummus party! Whether pita, toast… errr spoon… (not that I am speaking from experience or anything)


This hummus will leave your mouth in Mediterranean party mode and add that flare you need to get through your Wednesday and closer to FRIDAY.

Toasted Mediterranean Avocado Hummus

Recipe type: Appetizer
  • Hummus
  • 1 can garbanzo beans, drained
  • 3 cloves garlic
  • 1 avocado
  • 3 leaves fresh basil
  • 5-6 Kalamata olives
  • 3 tbsps plain yogurt
  • 2 tbsps feta cheese + extra for serving
  • Pepper (to taste)
  • 1 tbsp lime juice
  • 2 tbsp milk
  • Toast
  • 1 loaf French bread
  • Olive oil spray
  1. Add all ingredients to food processor and blend on high until combined.
  2. Scrape sides of food processor as necessary and pour into dish.
  3. Slice bread in ¾-1 inch pieces and spray olive oil on each side.
  4. Place on flat top grill or large skillet for 1-2minutes per side or until slightly brown.
  5. Serve bread with a generous layer of hummus and any desired toppings.
***Optional Toppings***
Sliced Boiled eggs, fresh corn, sliced grape tomatoes, green onion, olive oil, bacon, basil, feta-the options are endless- so enjoy and have fun with it!

As I mentioned previously, Basil is tied for first in my Favorite Herb Ranking and it will probably be remaining there.   I need it to be inside of, or on, 95% of my summer meals (that’s a real stat guys). As you may have guessed, caprese is one of those meals.

In my dream summer world (it’s a thing), I would plop myself on the couch and eat that tomato, basil and mozzarella combo 4 out of 5 nights a week and be in heaven, but alas my husband would starve.

So to make my taste buds happy and appease a big-eater husband, I add my caprese combo to Naan bread, to make Summer Caprese Flat bread!

By now you have probably seen at least 12884 recipes with zucchini + spiralizing = zoodles. I sort of have too. I think that was why I was somewhat resistant to the idea. I tend to be weird like that. Oh, everyone’s doing it? NOT FOR ME. And why would anyone choose vegetables over LEGIT noodles? Buttery warm garlicy noodles? No thanks. Pass that raw crunchy piece of zucchini my way! There is no logic or joy, I might add, in such a choice.
