Before I was Born PostI recently saw a friend share a post titled “How a Child is Born” and it was a photo album of several photographs taken by a Swedish photographer. These were taken with a very special lens that showed the process of the fetus developing in the mother’s womb. The detail was incredible and I had never seen the process in this way.

Viewing these photos, it was impossible to not be in awe of God and the intricate detail he has given our bodies from day one. These photographs came to mind when I read the following passage in my “5 Minutes with Jesus” devotional: “You watched me as I was being formed in utter seclusion, as I was woven together in the dark of the womb. You saw me before I was born. Every day of my life was recorded in your book. Every moment was laid out before a single day had passed.” Psalm 139:15-16 (NLT)

I don’t know about you, but all I could say for a moment was ‘Wow.’ And then the burdens or worries I was carrying around, that seemed so relevant and deserved, became a little silly. So, I can believe that my God created the entire universe and all its magnitude, as well as, each little baby from conception and give them character, personality and every little nerve in their bodies but he can’t deal with my situation at work?

I can imagine God just sits back and giggles at how incredibly irrational we can be. But on the other hand, maybe it saddens Him. He sees his children fretting and not trusting him when he sees the outcome, he remembers us in the womb and he knows when we will take our last breath.

Oh, when will it sink in?!

I hope we can all meditate on the encouraging words of Psalm 139 when worry hits our heart or circumstances feel overwhelming!

Not that it would be shocking…since salty is amazing and who could deny chocolate, but the mix is sometimes scary for me. But the sun was shining through my kitchen window; I had my cozy slippers on I got a wild hair. <-- What does that mean, by the way? I mean, I googled it…and it’s freaky…but why did we start using it as an expression?! Oh, and I think it is ‘hare’ not ‘hair,’ which would actually make more sense with the google definition, but still leaves me wondering why I can use it as a phrase in relation to food.

A couple weekends ago I was at the grocery store scanning the chip aisle desperately trying to decide on a couple good flavors. We aren’t really chip people. Let me restate that. WE LOVE ALL CHIPS. However, we avoid them due to their lengthy ingredient list of unrecognizable (read: unnatural) ‘things’ and suppress our inner chip love.

That being said, I am not above them when hosting my in-laws for the weekend and would prefer not be in the kitchen 82% of the day. We decided on a couple bags of Kettle chips and served them on the side of our Chicken Cheese Steaks (recipe coming soon!) that weekend. I grabbed a handful of the BBQ version and munched away. And then I FELL IN LOVE.

This simple and delicious chicken gives the crunch that is normally lacking in other baked chicken recipes without being fried in some good ole’ fashioned bacon grease. Not that I know anything about that.

Back to creative ways to have a dinner of chips without having a dinner of chips.

I cut my chicken into small strips, a little larger than nuggets and a bit smaller than normal chicken strips, to allow them to cook quickly but still max chip-crunch on its exterior.   I added my chicken to a small dish, poked several holes in the chicken (so it really soaks up that BBQ sauce) and let it marinade for at least 30 minutes and no more than an hour.Kettle BBQ Crispy Baked Chicken- a delicious crunchy chicken that is baked to remain light but loaded with BBQ flavor, coated with homemade bbq sauce and perfect for a sandwich or eating all by itself! |wordslikehoneycomb.com

Try to not eat the whole bag Add 4 cups of those delicious Kettle BBQ heavenly potatoes to a food processor and give them a quick pulse or two until they have reached desired size. Roll those mini chicken strips in that BBQ crunchy love and plop them on an oil-sprayed cooling rack like that up there ☝and cook. Done!

I ate my mini strips straight off the wire rack like an adult with a plate and got some sandwich action going for the hubs. Because he is a guy and they laugh when you give them little plates with a couple pieces of chicken. 🙈

Kettle BBQ Crispy Baked Chicken

Serves: 4
  • 1 ½ lbs Chicken (cut into small strips)
  • 4 cups Kettle BBQ chips (crushed)
  • ½ cup Iowa Girl Eats Homemade BBQ Sauce
  • Olive oil spray
  1. Add chicken to a small bowl and poke several holes in chicken with a fork. Add BBQ sauce and stir to coat chicken. Cover and place in the refrigerator to marinade for 30 minutes (up to an hour) [or skip marinating all together if you are short on time and just coat with the bbq sauce and go to next step].
  2. Preheat oven to 425 degrees and add 4 cups of Kettle chips to a food processor. Pulse 2-3 times or until chips reach desired size for coating chicken.
  3. Spray a wire rack with nonstick spray and begin coating each piece of chicken with the chips, rolling to coat, and place on rack. Continue until all chicken is coated and on rack and cook for 12-15 minutes or until chicken is cooked through. Allow to cool for 5 minutes and serve.
Prep time does not include optional marinating.
Chip crunch will fall off easily when first removed from oven, allow to cool at least 5 min before serving.

We do celebrations in our home. And when I say we do them, I mean we do them well and we do them often. You know those people that celebrate literally EVERY month of their first year of marriage, and post one too many photos on Facebook or Instagram, and annoy people with their over-display of affection? Those people are ridiculous.😑

And we are kinda those people. 🙈

We really try to keep it to ourselves y’all but when you marry your best friend it just kinda overflows and you just apologize to the public in general and head out to your next celebration of random days.
Forgive us. We know.
One such celebration [translation: multiple mini celebrations] happened this last weekend and a familiar inexpensive and unnamed, to keep what little credibility I have left intact, vice was calling our names. Being the foodie wife I am, I rose to the occasion to create a pizza worthy of celebration, no calorie spared. And I discovered…calories are GOOD. Add that to the list of things I wish I didn’t know.

Too often I come home and just stare into the refrigerator.

Food blogger or not, 👉this girl👈 never be one to brag about her preparation skills because they are certainly lacking.

And Sunday after church is no time to try out all my kitchen gadgets with new-fangled ideas and inspiration from the Italian guru Giada. Nope, it is time to make something healthy-ish and quick that requires no more than a little chopping and pouring.

Somehow the inspiration just doesn’t seem to flow when I am HANGRY and Steven keeps peeking around the corner to see if I have made any progress towards something edible.

Perhaps it was the fall air making its way through our kitchen door screen or the 5th candle I had lit in the kitchen (I am way past obsessed), but the juices were flowing and I knew exactly what we were going to have today and it conveniently utilized all the ingredients we already had. SCORE.

This was a soup.

In my head, I saw a pretty fall-looking, slightly orange but not the ugly orange, soup with bacon on top and some cute garnish. Yep, and then google hit me with the realization that about 16846514 other people had thought of the same thing.

And then I pouted. 😦😣😤

And then I saw that long pretty French loaf on my counter that I impulsively bought with no set plans to use, which becomes food waste about 83% of the time. I am not proud of it guys, but honesty is crucial.

This corner of my blog will be where I share different bits of encouragement, devotionals, favorite verses or books etc. I am thrilled to share this part of my life with you guys and hope you enjoy checking it out!
