I truly hope you had the most amazing Christmas with your loved ones, friends and all those you hold dear! If we were all honest with ourselves, I think we would all be just fine with a milkshake for breakfast daily. You know, if it made us feel as energetic and healthy as a green smoothie and really give us the boost you need in the AM.
Yes, I am certain we would.
Good thing we CAN.
I am here gifting you with another lovely smoothie that tastes more like dessert than healthy and we ALL are okay with that. I am just callin’ it. This glorious combo is made of frozen bananas and grapes to get the ultimate milkshake texture and that ice cream sundae vibe with a blend of vanilla and chocolate protein powder to make that milkshake keep you satisfied all morning!
Naturally, as the name implies, this smoothie puts me in mind of a banana split, which then leads you to the assumption that I have this every morning. Your assumption would be correct because I have made this 968451864 times since my Chocolate Shakeology came in the mail last month. Can you really blame me folks?
Another little ingredient…like REALLY little, are chia seeds! Not to be mistaken with chia pets. You probably didn’t make that mistake, but I find myself audibly repeating the popular jingle from my youngin’ days advertising the “Cha-Cha-Cha Chia!” pets that seem to have disappeared from any television station. But hey guys…Christmas is coming and WHAT a gift for that person who has everything…amiriiiight?! Dare I say they even have some modern options?
Would it affect my credibility if I maybe, just kinda secretly (YALL DON’T TELL) like these emoji pets (I won’t be mad if you get me one, just make sure the box is shipped unmarked 🙈)?!
Things got a little too personal there. ANYWAY. The chia SEEDS. They are healthy filling little seeds that develop this smooth little coating once they hit water so you never even taste them and unless they get stuck in your teeth (awkward.) you will forget they were even present in that banana split err’ smoothie! I love the kinda healthy that involves pour little cute seeds in your breakfast that you can feel great about and don’t have to think about after that! Basically one more reason you should have dessert for breakfast (😍)…again…please don’t bring up the fact that I have forced sweet breakfasts on you two posts in a row. Mkaythanks. PROMISE not to do that again…this week.

- 1 small frozen banana
- 1 cup frozen grapes
- 2 tsp. chia seeds
- 1 scoop Chocolate Shakeology*
- 1 scoop Vanilla Shakeology*
- 2 cups unsweetened vanilla almond milk
- 1 cup water (optional)**
- Add frozen fruit, liquid(s), protein powders and chia seeds to blender. Pulse until smooth or reached desired consistency and serve immediately.
**If you would like a thinner shake, add water to create more of a drink consistency.
Keeping things short and sweet today...emphasis on the SWEET.
Get it? Because I am greeting you with DESSERT for Monday morning and I don't feel bad about it at all. Because even though, I consider it a definite sweet kick, each serving is well under 300 calories so you don't have to feel miserable afterwards...even if you have it for breakfast 🙈.
Since its naturally sweetened, even desserts can be semi-guilt free! And with the protein this little cup packs, you wont be craving the next sweet temptation an hour later. Total win in my book because if you work in an office like me, Christmas is an excuse to have every sweet imaginable lying around every empty cubicle staring it's evil eyes at you.
But this creamy sweetness with a hint of cinnamon and apple, tart arils and a nutty crunch will definitely curb that craving juuuust fine. TAKE THAT COOKIES. 💪👊 (just kidding, I still love you😍🍫)
Full disclosure: I had never cut a pomegranate before in MA' LIFE until this recipe. I cut the thing, not really knowing what to expect and the little arils were literally flying everywhere the entire time I was removing them. I am still finding them in corners of the kitchen!
Naturally I saw this clever tutorial AFTER my disaster by Kristin. I should have known to go to the pro's for such things. Not to mention, that Power Bowl will definitely be a great way to utilize my remaining pomegranates in my produce drawer!
If you haven't ventured into pomegranate things, I definitely recommend it! They are the most amazing fruit and definitely add such a fun burst of flavor to practically anything. Especially Apple Pomegranate Parfaits!
- ½ cup unsweetened apple sauce
- 1 cup greek yogurt
- 2 tsp. cinnamon
- 2 tbsp. honey
- 2 pomegranates (all arils)
- 4 tsp. crushed pecans
- Mix yogurt, applesauce, honey, and cinnamon in a bowl until blended. If desired, add 2 packets of Stevia for more sweetness.
- Layer yogurt then pomegranate arils in each bowl until all are filled. Or mix arils into yogurt and pour into bowls.
- Top each bowl with crushed pecans and serve.
Can we all just do a little happy dance in our living rooms/offices/beds(?!) because it is FRIIIII TO THE DAY.

Don’t get me wrong, I really love to cook! I love getting creative and combining different flavors to see what happens, and trying new types of food that I never have before. I love how my kitchen feels like my space. It is where my imagination comes alive and where I try to always challenge myself to do better. I love finding the balance between healthy and indulgent and creating meals that taste so good that they COULDN’T be healthy?!
Oh yes. There had to be a, but. Oh stop, you know which but I am talking about!
Sometimes I come home and even a bowl of cereal just seems too hard.
Alas, I must persevere because this girl is STARVIN’ and we gots ta’ eat.
This is when the kitchen magic must happen and I need that magic to work within 30 minutes.
Soups are a good go-to for these nights, where you need to be able to throw everything in a bowl and it taste good and leave you with a good ole “ahhh!”
Soups are definitely good for that, but for me…I am more like a soupy pasta girl. Yeah, I realize that isn’t a thing, but it is the best description of this not-soupy-enough-to-be-soup BUT too-soupy-to-be-pasta dish!

Healthy ingredients sneaked in together with seasoned goodness, some herby love and topped with parmesan for good measure all cozied up in a bowl to be eaten while curled up on the couch…er…at the dinner table like the adult you are.
Although not in the running for any beauty contest, this bowl of chewy satisfying flavors surprised Steven and I both. Like we literally almost spoke over each other when we said “Wow, this is actually good!”

Every night is a science experiment in the kitchen and he sits down each time saying, ‘what is this?’ to which I normally say “I don’t know yet.” #reallife
I love how this combo of simple ingredients, that you probably already have in your cupboards, can create a quick dinner for when you are tempted to google Chipotle’s takeout number. No judgements here, guys…been there.
Let this be your answer! Use those kitchen appliances to kick the food prep’s butt and tip your hat to yourself 30 minutes later. You just made a healthy dinner that actually tasted good.

Any delicious soups out there that I need to try? I would love to give them a second chance!
*Nutritional info is for 1 serving, about a cup.*
- 1 lb. ground meat (I used turkey)
- 3 cups chicken or vegetable broth
- 6 celery stalks
- 8 oz. baby carrots
- 2 small onions
- 15 oz. great northern white beans
- ½ cup chopped fresh cilantro
- 10 oz. can diced tomatoes and green chiles
- 2 cups short cut pasta (I used pipe rigate)
- 1 ½ tbsp. Chipotle Tabasco sauce
- 2 tbsp. Worcestershire
- 1 tbsp. olive oil
- Salt & Pepper (to taste)
- Optional Toppings:
- Green onion
- Heat a Dutch oven or large stock pot over medium-high heat. Add olive oil and begin to brown meat.
- Add carrots, celery and onion to a food processor or blender and pulse until finely chopped.
- Add to browned meat and allow vegetables to soften (about 5-7 minutes).
- Add remaining ingredients and lower heat. Allow to simmer for 10 minutes stirring occasionally, remove from heat and serve.
