Too often I come home and just stare into the refrigerator.
Food blogger or not, ?this girl? never be one to brag about her preparation skills because they are certainly lacking.
And Sunday after church is no time to try out all my kitchen gadgets with new-fangled ideas and inspiration from the Italian guru Giada. Nope, it is time to make something healthy-ish and quick that requires no more than a little chopping and pouring.
Somehow the inspiration just doesn’t seem to flow when I am HANGRY and Steven keeps peeking around the corner to see if I have made any progress towards something edible.
Perhaps it was the fall air making its way through our kitchen door screen or the 5th candle I had lit in the kitchen (I am way past obsessed), but the juices were flowing and I knew exactly what we were going to have today and it conveniently utilized all the ingredients we already had. SCORE.
This cooler weather is giving me the craving for those stick-to-your-bones kind of soups and creamy comfort food, but for the sake of it also sticking to my thighs, I am seeking that cozy feel without the extra…ahem…sticking things.
This generous helping of chili-like goodness packed with vegetables and protein clocks in at UNDER 500 calories, which kinda made my day when I calculated it *more please?* and gives you permission for a little cheese on top giving it full comfort-food status!
You better believe it. Naturally, I am always trying to get us to the table pronto (for my selfish hunger reasons) so we can enjoy the bennies of a home cooked meal. But I was shocked when I realized we were eating at the table within 30 minutes of starting this whole process! Uh…time flies when you’re having fun? Maybe…but also because everything cooks in your lovely Dutch oven…HI one pot goodness. ?✋?✋ I was finally added to the Dutch oven club earlier this year and I am never going back.
This particular chili could simmer for hours and get better and better, but with the quick heat created from the Dutch oven, it was delish in time for lunch! Just brown your meat in a little oil, add the chopped veggies to get all seared and tender and pour in the rest for a simmer and that’s it, guys.
Is this too easy to call a recipe? ?

Hoping this Dutch oven love will help you through you mid-week-after-a-holiday-slump and get you racin’ towards Friday!
- 1 lb. lean ground turkey
- 1 green pepper (diced)
- 1 onion (sliced or diced)
- 1 jalapeno (diced)
- 1 zucchini (chopped)
- 1 cup corn (frozen or fresh)
- 1 15.5 oz. can kidney beans (drained and rinsed)
- 1 16 oz. package gnocchi
- 1 28 oz. can crushed tomatoes in tomato puree with dried basil
- ½ tsp. cayenne pepper
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tbsp. extra virgin olive oil
- Heat Dutch oven over a medium-high heat with 1 tbsp. oil. Add meat and cook until brown.
- Add peppers, onions and jalapeno and cook until tender.
- Add remaining ingredients, stir to combine and simmer for 15 minutes.
- Yep...that's IT.
