Better Than Larabar Bites are a slightly sweeter, super easy and mini bite-sized version of the very popular, yet pricey, blueberry muffin larabars that you can make at home!
BOLD statement happening in that title…I know. Especially since the blueberry muffin Larabar is our absolute favorite. But, as most of the larabar versions floating around the internet began, I was cringing every time I put that little 5 pack in my cart.
I skimmed the super short ingredient list and thought, “these HAVE to be easy to make!” and I determined to make it happen. And happen it did. Obviously, I am not acquainted with Ms. Lara of Larabars…or whomever is to credit with these little genius money-making bars, but this recipe tastes pretty darn similar and …dare I say…BETTER?!
After a few tries, I have achieved, nay, mastered the art of the blueberry muffin Larabar and tweaked it to our liking. I am here to share the result of blood, sweat and tears (ew) with you today and solve your Larabar debt issues.
I know we are all about convenience these days and throw our money at the cashier to save effort in the kitchen, but I PROMISE, these are a cinch. You are gonna flip out when you see how easy these are.
Let’s run through this real quick.
Soak your dates! It makes such a difference because they get all sticky and soft and perfect for blending with the other ingredients. I like throwing them in a bowl with water while I wander around the kitchen locating my other ingredients.

Novice or Expert, you can totally handle this! Literally pour everything in your food processor (<affiliate link) and press the button. I KNOW. So easy you can’t stand thinking about all that money you spent on Larabars all those years.
Two roads to take and it’s totally up to you. I prefer the bite-sized version which is all hands on and cutesy but you could also make these the traditional way and form little snack bars in the Larabar fashion. We are friends either way, rock your socks off.
If you arent the biggest fan of the blueberry larabar, seems like a sad world to live in…but you could always try switching out the blueberries for raisins, cranberries, dried cherries (this version is super delicious), or anything else you can imagine! The recipe is adaptable and flexible to all your flavorful imaginations 🙂

- 1 cup raw almonds
- ½ cup toasted cashews
- ½ cup toasted coconut chips
- 1 ½ cup pitted dates, prior to soaking
- 1 cup dried blueberries
- 1 ½ tsp. pure vanilla extract
- 1 tsp. lemon juice
- ¼ tsp. kosher salt
- Begin by placing dates in a bowl and covering with warm water and allow to soak for 15-30 minutes.
- Place soaked dates and all remaining ingredients in a food processor and pulse until a sticky dough-like mixture has formed. Remove mixture shape into about 24 balls/bites. *See notes for larabar version
