Chia Chocolate Pudding Parfaits-the healthy sweet snack that is easy to make ahead and perfect for breakfast or dessert!
So,I must confess. I wasn’t really thinking about you guys when these chia chocolate pudding parfaits became a thing. Nope. I was thinking of me and my hardcore sweet cravings. When they hit, they HIT. It’s pretty scary and it is a search-every-cabinet-looking-for-anything-resembling-chocolate. In case you guys didn’t know, cocoa powder isn’t sweet ?.
Pudding Saves the Day
Trust me, it is best to prepare for these moments rather than leave it to discipline and find yourself elbow deep in cocoa powder. One of my favorite ways to curb that craving is with Blue Diamond Almond Breeze. It is the perfect blend of silky, creamy and rich chocolate flavors. The chocolate isn’t overpowering, but rather smooth and subtle. I have tried several versions of chocolate almond milk and they are normally way off balance being way too chocolaty or not near enough. After trying Almond Breeze, I am hooked! I think you can only imagine the joy in my tummy when this smooth chocolate married together with little chia seeds sandwiching in creamy vanilla yogurt and topped with bright fresh strawberries and the cutest mini chocolate chips in life! THAT is dessert with a healthy twist, my friends, and guaranteed to make you forget all about that brownie in a mug you saw on Pinterest last night ?.
Have you tried this miracle that is chia pudding?! It’s complete magic. Add liquid to a bowl, stir in chia seeds and POOF pudding in the fridge in an hour. I am partial to chocolate so chocolate almond milk seemed the obvious choice but it is also tasty with vanilla almond milk.
Let your imagination be the limits when it comes to this dessert because it is fool proof and completely delicious in all varieties! I miss mine with vanilla yogurt which adds a perfect creamy level and you could even mash any type of fruit to add more sweetness to the dish. Honey is also an excellent natural sweetener if the strongest of sweet cravings have hit!
Just this moment I am having visions of a banana split version with vanilla yogurt chia pudding, mashed banana with chocolate chips and cherries on top. Could someone please go try that and let me know…in my mind it sounds incredible ?.
So before you stash some Snicker bars behind the oats in your cabinet, give chia pudding a try! you will satisfy that sweet tooth in a healthy and satisfying way ?.

- 1 cup Blue Diamond Almond Breeze almond milk (or similar)
- ¼ cup chia seeds
- ½ cup vanilla low fat yogurt
- 1 cup strawberries (chopped)
- 1 tbsp. mini semi-chocolate chips
- Add milk and chia seeds to a bowl and stir. Add to the refrigerator and allow to set for at least 1 hour and up to overnight.
- Add one forth of chia pudding to a small bowl and repeat in second bowl.
- Divide yogurt between the two bowls and then add final pudding layer to both.
- Top with strawberries and chocolate chips and serve.
