We hit the ground running after the holiday weekend and it seems like we wont be slowing down anytime soon! This probably describes most of your lives year-round so this goody is for YOU. Incredibly tender shredded chicken that is spiked we chipotle flavors with a simple blender sauce!
Obviously, this will need to be used for tacos on Tuesday, inside your favorite chicken soup on Wednesday, doused with BBQ sauce between two buns on Thursday and smothered with cheese for quesadillas on Friday! BAM. Your meal plan in one sentence!
As always, the chipotles are the star of the show and that is why I love them. They bring the party, they are inexpensive, and they jive with all sorts of flavors. A quick blend of the peppers, seasoning, cilantro and yogurt create a saucy marinade to be absorbed by my next favorite in line- the chicken thigh.
Humble as it may be, the chicken thigh makes all the difference in decent chicken transforming into completely delicious pull-apart tender chicken! I used a half-half mixture in the crockpot to keep the fat content down (chicken thighs tend to have a bit more fat) and the duo was a complete success! Not to mention, they soaked up loads of chipotle flavor like pros.
Total spoiler alert here, but we used this chicken in a certain crock pot meal that may or may not be happening next week. So, obviously you will benefit from whipping this up before next week’s crock pot goodness that is all sorts of cozy and warm! The cooler weather is here and the cozy needs must be met!

Tools for this recipe:
- 2-3 lbs. chicken breast and thighs (I used enough to cover the bottom of my 6qt crock pot)
Chipotle Sauce1 cup yogurt
- ¼ cup cilantro
- 3-4 chipotle peppers
- 1 tbsp. adobo sauce
- ¼ cup lime juice
- 5 garlic cloves
- 1 tsp. salt
- Place chicken in the bottom of the crock pot and set aside.
- Combine all sauce ingredients into a mini food processor or blender and pulse until fully blended.
- Pour sauce over chicken and arrange chicken until all sides are evenly coated and cover.
- Cook on low for 8hrs and then shred chicken with fork. The chicken should tear easily.
- At this point you can serve immediately, or allow to soak up the juices even more.
- Store for up to 1 week or freeze leftovers in a sealed container for later use.
