Yes. Here we are again talking about little things that are healthy and covered in chocolate.
These little bites are incredible and SO simple.
Banana, peanut butter and chocolate. BOOM. Completely incredible and hits the spot in two seconds. Lyndsay (aka my grilled cheese sandwich model) mentioned these little miracles to me during our trip to Virginia and she had my full attention after “dark chocolate.”
Is it weird that I sometimes forget about simple little combos like these guys because I am too busy adoring lentils and deciding which broth to simmer my quinoa in?
Sometimes life calls for just a few ingredients to bring a smile to my face and happiness to my taste buds. I will never turn my back on those adorable lentils but there is a time and a place for simple combos that take you back to your Mom’s kitchen all those years ago. Mom always knows best, right? ?
Not that you guys need much help with this recipe, I totally have faith in you, but might I recommend chilling your banana and peanut butter bites before you layer them with chocolate? I found the process a bit cleaner working with cold bananas, than the mush-mess that may or may not have happened round one. #bananaproblems
Also, I am definitely not the gal that says “I’ll just have one, thank you.” Moderation is a daily struggle?, but with these little guys…it is actually really easy! I don’t know if it is the bananas, or the peanut butter or maybe the use of dark chocolate but one truly does hit the spot and helps me move on with my day and focus on issues like limiting my cheese intake. If you are still tempted to reach for more than one, try individually wrapping them, like candy! Sometimes, just a small plastic wrap barrier is all we need to keep that sweet from becoming a major splurge.

- 1 large banana
- 8 tsp. peanut butter
- ½ dark chocolate
- parchment paper
- Peel and slice banana into ¼ inch slices or preferred thickness.
- Add ½-1 tsp. peanut butter to half the slices and add remaining slices to form a small 'sandwich'.
- Place sandwiches in the freezer for 10 minutes.
- While cooling, add chocolate to a microwaveable bowl and heat in intervals of 30 seconds until chocolate is smooth and melted.
- Remove sandwiches from freezer and coat each with chocolate, then place on parchment paper. When all are coated with chocolate, add bites to refrigerator until chocolate sets (about 15-30 minutes depending on refrigerator settings).
Depending on your love of peanut butter, I recommend starting with a half teaspoon unless you love peanut butter and want a strong taste! The nutritional facts reflect the use of 1 full teaspoon, so if you use less, fat content would decrease.
I recommend wrapping each bite individually to keep them accessible and to promote portion control 🙂
