WELCOME to Monday! You can decide the level of sarcasm in that phrase. Although, it does seem that the Monday woes are the worst after a wonderful holiday weekend. Raise your hand if you were hoping it wouldn’t end too. Wow! that’s like…EVERYONE. At least I am not alone!
But the GREAT thing about Monday is the chance to start the week off eating better than
we I ate this weekend!

We escaped for the weekend to North of Atlanta near the Mall of Georgia. Definitely my favorite mall thus far in Georgia and home of a P.F. Chang’s location (love/hate you P.F.)! The mall is gorgeous and THREE stories at a few different areas. It is also quite near the main focus of our weekend, Lake Lanier and specifically Lanier World. LanierWorld is a water park located on one of the Lanier Islands and we completely conquered every slide! And I am now a ZIP LINER enthusiast, you guys! (I screamed the entire time) My family met us at the park to join in the fun and It was just what we all needed for some relaxation, fun and 4th of July CELEBRATION! It’s amazing how incredible that summer Georgia heat can feel when you are inches away from refreshingly cold water and a jumbo slide. YES.
But as we truck through this Monday, enjoying lovely memories of the weekend, let’s put that Crock Pot to good use and skip cooking tonight. I give you permission 😉
If you guys are anything like me, it can be difficult to muster up the energy to whip up
anything something healthy for dinner! Since we understand each other, I prepared your solution to that healthy QUICK (for you at least, I can’t speak for your Crock Pot) dinner after a long hard Monday-Cilantro Salsa Crock Pot Chicken!
I know you completely stopped what you were doing last week and threw your ingredients in that food processor to enjoy Cilantro Lover’s Salsa. I’ll take your silence as a HECK YES. I knew I liked you guys!
Cilantro Lover’s Salsa will MAKE your Monday by getting cozy with those chicken breasts in your crock pot, while you’re doin’ the 9-5 thing. The chicken will transform into moist deliciousness by the time you pull in the driveway! The options are endless for this cilantro spiked chicken, but some of our favorites include:
- layering it over a bed of spinach with all our favorite toppings
- wrapping up in a warm tortilla-Taco Tuesday style
- chicken nachos-because…cheese
- combining with lime and cilantro flavored rice/quinoa and getting our burrito bowl on
Top it, stuff it or mix it- whatever makes your Monday- but by all means, do so pronto!

- 2-3lbs chicken breast
- 1.5-2 cups Cilantro Lover's Salsa
- Cut chicken breasts into large pieces and place in Crock pot.
- Pour salsa over chicken breasts and stir to combine.
- Cook on low for 6-8hrs.
- Shred the chicken while in the Crock Pot and stir again to combine.
- Serve and enjoy!
