I am soo bad about making my smoothies during cold weather seasons and oatmeal becomes my crutch.  But seriously all the goodness is packed in that oatmeal so I permit myself a smoothie strike.  I use a variety of this oatmeal recipe allll the cold weeks but this is the basic recipe for what I make for the week. Yes, week…not a typo.

Therefore, this recipe does make like a TON.  But it will feed your family for all the days of the week so you are going to love me for that.  It also keeps well in the fridge all week! For years I thought oatmeal only came in little brown instant packets with the Quaker man on them and then I adventured into the adventurous world of oats.  Umm. WAY better you guys.  You knew this…but I am just agreeing with you.  No crazy ingredients and totally fulfilling! You can have a serving for under 300 calories!

Speaking of HAPPY…uhh it’s FEBRUARY, aka the month of sweets ‘er love whichever you relate more too ? And I have some yummy sweets coming your way in the next couple of weeks…all easy because we have lives and perfect for sharing with your valentine or to “Treat yoself!” (name that show).

I am sure we will have an incredibly romantic Valentine’s day around these parts.  I know this because of our Valentine’s discussion yesterday:

Me: “So what entrée do you think I should make for Valentine’s day?! I want to make something special!”

Steven: “I don’t know what do you want to make?”

Me: ?  “I want your suggestions!”

Steven: “What about a pig heart?  It is a heart so that’s romantic for Valentine’s Day!”

Me: ??”GROSS. Never mind.”

Cinnamon Banana Oatmeal with Apple Everything Spread

Serves: 16 half cup servings
Ingredients
  • 4 cups oats (not quick oats)
  • 4 cups water
  • 4 cups milk (I use skim)
  • 3 bananas (mushier the better)
  • 1 cup brown sugar
  • 2 tbsp. maple syrup
  • 1 tbsp. cinnamon
  • Optional:
  • 1 tbsp. Apple Everything Spread(per serving of oatmeal)
  • chia seeds, honey, nuts, flax or any other chewy seed!
Instructions
  1. Combine oats, milk, water and bananas and heat in a dutch oven over low-medium heat, stirring often. After about 8-10 minutes or when oats have soaked most of the liquid up, stir in remaining ingredients.
  2. Allow to cook on low until the ingredients are combined and there is no remaining liquid (about 5 minutes) *see notes
Notes
This is going to be up to your own taste. Some prefer their oatmeal more liquid-y, however, the instructions reflect my own preference of thicker, zero liquid, oatmeal so use your own discretion when cooking and remove the pot from the heat quicker if you desire some liquid to remain.
Remember, if you use a Dutch oven, it will stay hot longer after removing heat, so remove from heat as soon as the oatmeal is close to your desired texture.
