And of COURSE they are perfect for Christmas because…you know…red and green.  And let’s be honest, if you are going to bring vegetables for Christmas, they better be cute and involve cheese.  Well, CHECK ✔and CHECK✔ because these bad boys are quite adorable and sandwiched with a spicy feta kick incorporating flavors of creamy tomato and basil.  They are totally bite-sized so you can grab like 53 while walking by the table quickly…no one will be the wiser!Creamy Feta Veggie Bites-the perfect veggie item to lighten up your Christmas spread! A few ingredients and a little slicing will give you the perfect appetizer or snack to keep away from cookies and all things with chocolate.  I have definitely found that having healthy snacks all made up and accessible helps me keep on track when so many other options lurk in the not-so-dark shadows -_-

With clocking in just over 50 calories for two bites, you can feel good about loading up on these little guys without feeling guilty!  The creamy feta spread has that undeniable Greek flare that keeps things exciting in the veggie category!  Why aren’t I vegetarian again?  I really feel like I could have been if it weren’t for the bacon, sausage, chicken, steak, beef, pork…yeah.  Just a few things kept me from being vegetarian,  guys.

Weekend before Christmas or not, the construction crew, (aka Steven) took on the back splash portion of our kitchen update and WHAT a big difference!  He made incredible progress and I was astonished to see how many hours it required!  He is still polishing up some details but it seems like we are definitely on target for finishing very early into the New Year!  All I have to say is kitchen remodels aren’t for the weak. 0_0  And although our kitchen remodel is mostly cosmetic, I feel for you guys out there that have done a legit sledgehammer-to-the-walls type of reno!

*Depending on the size of cucumber, a serving size is approximately 2 ‘bites’*

Creamy Feta Veggie Bites

Serves: 12-14 bites
Ingredients
  • 1 cucumber
  • ½ pint grape tomatoes
  • ½ cup feta cheese (I used tomato & basil flavor)
  • 2 tbsp. Greek yogurt
  • 1½ tbsp. skim milk
  • ¼ tsp. garlic powder
  • ⅛ tsp. dried basil
Instructions
  1. Run a fork along all sides of the cucumber (to create design) and slice thinly. Cut tomatoes in half and set veggies aside.
  2. Combine cheese, yogurt, milk and seasonings in a small food processor and pulse until well combined. You may need to use a spatula in between pulsing to remove mixture from the sides of the food processor.
  3. Add about 1½ tsps mixture to cucumber slice, top with half tomato and repeat until all veggies are used.
  4. Serve immediately or store in the refrigerator, covered.
