Greetings friends!! Here we are at Friday again and I brought celebration food that is totally on POINT today. What brings people together better than a heaping bowl of guac?! My peoples always hover quickly when I show up with this fresh green goodness and a bag of chips in tow. Guacamole is sort of a love language in our family and I have been unofficially tagged with bringing the dish to every social gathering where more than myself will be present.
I have been making it for quite some time now and slowly perfecting the recipe, while gradually improving each time. I have withstood the foodie criticism of my entire family and their keen taste for the perfect guac and although I had wanted to share this with you sooner, said food critics only just recently deemed it blog worthy. They look out for you guys. And with things as serious as guacamole, we don’t mess around.
The stages of Guacamole
Before I reveal the recipe, we need to embark together on the journey that unfolded. I believe you may find yourself venturing through some of the same experiences, so this is our story. As I mentioned, this is serious biz.
You began this journey as most probably do. Consult Google about how on earth to cut an avocado, decapitate a few fingers, and eventually master the skill.
In this stage you begin to realize that black is good and green is bad, and even though the avocado feels bad and squishy, this is good. You only learn this through trial and error with a story resembling this:
Green skin equates to an edible rock that you will eventually slice, peel the skin back minute piece by minute piece because they will fight you to the death and refuse to give in easily. The utter exhaustion will cause you to continue and chop away at the tough bright green flesh because there is no way you aren’t enjoying the fruit after all that work. Ten minutes later your kitchen counter resembles a crime scene and you have relented that there will be no avocado had today.
Allowing your new-found wisdom to guide your shopping experience, you choose two slightly soft avocados that you determine will be the perfect ripe level when you decide to give guacamole another chance tomorrow. These things require planning, you know.
I would guess the majority of people fit in this intermediate category. You know how to choose your avocados. You pop that seed out with ease and You Tube doesn’t need to instruct you in avocado ways.
For the most part you are fairly satisfied with mashing avocados, adding some salt and lime juice and digging in. You only cheat with a seasoning packet occasionally and that’s okay. Your creations don’t knock your socks off but they get the job done.
You are determined to know more, everything, in fact, about the mastery of guacamole. No seasoning packet can satisfy and you realize life isn’t complete without that perfected recipe and your search for perfection is forever. Hi friend, welcome to my insanity. Thank you for playing along with my drama, slightly irrational, definitely ridiculous progression of the guacamole stages. It felt necessary in order to truly appreciate the hours of dedication needed to achieve the guacamole heaven before your eyes.
It turns out that mastery doesn’t necessarily mean complicated and things have actually gotten much easier due to the most crucial tool to smooth guacamole: the Vitamix or Food Processor. These devices have cut out prep time and made guac enjoyment a possibility for every day life when I don’t have forever to dice and chop everything. Not to mention how CREAMY it makes the mixture. Mastery level is now achievable for all!
Part of the beauty in the perfect guac is adapting it to your own particular tastes. I assume you have got on by the whole “spiced” part that this is not a bland guacamole. If you are looking at a light subtle flavor, you need to cut everything on the list in half because we are all about the SPI-CAY around here. You know, not in the heat sense of the word but in the my mouth-is-happy-about-so-many-things-right-now sense of the word. We feel good about this, don’t we? Of COURSE we are. I love us 😉

- 2 avocados
- 1 small roma tomato
- ¼ cup packed fresh cilantro
- 3½ tsp. lime juice
- 2 tsp. ground cumin
- 1½ tsp. salt
- 1½ tsp. garlic powder
- Add lime juice, cilantro, avocados and then remaining ingredients to a high-powered blender or food processor. (By adding juice, herbs and avocados to the bottom, the mixture will blend easier)
- Begin to pulse, pausing to reincorporate the ingredients that have escaped up the sides. If using a vitamix, this is a great use of your "tamper tool" to keep the ingredients running through the blades.
- If the mixture seems a bit dry, add a few drops more of lime juice. Depending on the size of your avocados more may be necessary.
- Blend until smooth and creamy.
