From the day I started this blog, I have had big dreams/ideas about what all I wanted to share with the world. Food will always be present, because it is near and dear to my heart and I am kinda passionate about it! However, my relationship with the Lord is even more important to me (of course) and I have been looking forward to this new spot on my blog: Honeycomb Corner.
This corner of my blog will be where I share different bits of encouragement, devotionals, favorite verses or books etc. I am thrilled to share this part of my life with you guys and hope you enjoy checking it out! I have decided to add this in order to share another passion with you guys and also keep me accountable to feeding my soul as well as my mouth 😉

And now back to our regularly scheduled programming/food picture fest.
This ☝ colorful creamy bowl of quick dinnertime in-my-tummy-now yumminess has got me enjoying simple meals all over again. Gnocchi, tomatoes, spinach, cream cheese, milk and pesto… THAZZZ IT! I need to make dinner when I’m starved more often, guys.
I tend to overdo it with 196843 ingredients because I sort of LOVE cooking and ALL-THE-THINGS around me need to be thrown in the pot because, Why NOT!? But a hungry girl…well she finds only the necessities to make dinner happen and happen fast! I need this girl to be my bestie, because poor Steven has had to sit on the couch waiting for dinner well past 7pm more nights than I want to admit.
I am sort of thinking he won’t always be that patient, so for those nights…this recipe is in my back pocket! You are 20 minutes and 6 ingredients away from a perfectly satisfying, creamy dinner with no lack of textures or flavor!
Grab your skillet and begin by heating up a package of gnocchi and giving them a crispy coating and soft inside ? I found these basil spiked gnocchi at Aldi and LOVED them. The perfect basil flavor and the same lovable gnocchi texture. Heat up a simple sauce of milk, cream cheese and pesto, throw in a whole bag of spinach, let it wilt a bit and then throw in your tomatoes. After a few minutes, those tomatoes will begin to burst and release their flavor into the mixture. Throw the gnocchi back in and stir to coat all the ingredients with that creamy sauce and you’re done!
Serve to all your peoples and see their smiles!
Although meatless, those gnocchi do their job to fill ya’ right up, but sausage or chicken would also be wonderful to throw in this-or serve as a side in place of potatoes.
No matter how you serve it, it’s easy, simple and delicious.

*Nutritional Facts are for 1 dinner portion (meal serves 3 generous servings, or 6 side serving sizes)
- 16 oz. Basil Gnocchi
- 1½ cup grape tomatoes
- 8 oz. bag fresh spinach (rinsed and chopped)
- ¾ cup skim milk
- 2 oz. cream cheese (broken up in small pieces)
- 2 tbsp. sundried tomato pesto
- Salt + Pepper (to taste)
- Add package of gnocchi to a medium-heated nonstick skillet and allow to crisp for 3-5 minutes until slightly golden brown. Set aside.
- Remove pan from heat, allow to cool 1-2 minutes, then add milk, cheese and pesto. Stir to combine.
- Add skillet back to heat and pour in spinach and tomatoes. Stir to coat with sauce and cover for 3-5 minutes, until tomatoes begin to burst and blister a bit.
- Add gnocchi to skillet, stir to combine and serve.
Top with fresh basil and shredded mozzarella for added flavor. (optional)
