Fish scares me.
I mean…not Nemo…I LOVE him.
But the not cute fish who have no relation to Nemo and can be found in your local grocery store in plastic wrap.
You see, we didn’t really grow up eating fish regularly. The occasional fried tilapia was as adventurous as we got and even that felt sophisticated for me. HA. When I began cooking I stuck to chicken and beef. You know the things that changed colors when they were cooked properly. I knew what to expect with beef and chicken. It didn’t try to trick me or be complicated.
FISH on the other hand…that white Cod that “becomes flakey” when it is cooked but has practically no color change at all. Haddock, same thing…yes, it turns white but hello…kinda white when it is raw too 8-|. Well, Salmon, it is pink. And guess what color it turns? …PINK. To be truthful, it does get lighter, but still.
After being set in my ways for quite a while, I was reading a book about healthy foods and their nutrients when I arrived at the page titled ‘Salmon.’ I gave the pinkish fish a chance and read the nutrition facts. You guys…salmon is like…SERIOUSLY good for you. We are talking Omega-3 fats, cancer-fighting and almost 20 grams of protein in about 3 ½ ounces! I know this is probably no news flash to the rest of the world, but it gave me the ambition to give salmon another try! My salmon adventures eventually produced: Crispy Baked Salmon w/ Herb Sauce.
This 20 minute meal…YEP…was a breeze to put together and allows you plenty of sauce for Monday’s Post! 😀 But if you would rather not be cool, you could simply cut the recipe in half…you will be missing out though!
The herb sauce for the salmon is an easy throw-all-the-ingredients-in type of sauce, which I know is all you guys have time for…me too! Although it takes less than 5minutes to make, it has no lack of flavor!
The cilantro and garlic in this sauce make for a delicious pairing with the salmon and keep the seasoning simple. Plus, I think I get extra points for color <3
I loved how easy this whole meal was and surprised myself when I was at the table eating 20 minutes later! My favorite. Needless to say, we will definitely be eating more salmon…so expect to see something other than chicken on this blog, folks!

- 4 4-5oz salmon fillets
- ¾ cup panko bread crumbs
- Salt + Pepper
- ⅓ red onion
- 5 cloves garlic
- 1 green bell pepper
- Half an avocado
- ½ packed cilantro
- 2 'triangles' Happy Cow Queso Fresco Chipotle Cheese
- 1 Tbsp. olive oil
- Olive oil spray
- Preheat oven to 400 degrees.
- Add ingredients 4-10 (onion through olive oil) to food processor and blend until smooth.
- Prepare salmon fillets by patting dry with a paper towel.
- Season with salt and pepper.
- Add 1-2 tbsp. sauce to top of salmon until covered completely.
- Divide panko evenly and top each fillet of salmon until coated.
- Spray olive oil over tops of panko and add to oven.
- Cook 8-10 minutes until salmon is cooked and panko has begun to brown.
- If necessary, broil for about 60 seconds until panko is a golden brown.
- Serve immediately.
