Whether you buy into the whole beginning-of-the-year health kick or not, it never hurts to get your veggies and protein in and furthermore, it doesn’t hurt to ENJOY that process.
Even more, it is always better if such bowls of aforementioned rainbow foods are covered in perfect balsamic vinaigrette with a blend of tangy garlic and sweet honey. SEE! You actually WANT your veggies now.

So the greatest thing about salad, obviously, is the dressing…not up for debate. But the next best thing is how interchangeable all the ingredients can be! I pretty much threw everything in a bowl that we had on hand. There, now you know my blogging secrets ? But that means you can do the same!
Make that salad work for you! Leftover Quinoa? Throw it in. Still have that one carrot that wouldn’t fit in the veggie stew? Throw it in. You could even throw in some protein like chicken or turkey and call it dinner!
I made this salad light on the lettuce and quinoa since we all really just want the toppings. And dressing. DUH.
Get wild with yourself and throw in some Feta! It would be completely delicious and compliment those flavors beautifully!
No matter what way ya’ mix it, just make sure you make that 2 minute dressing down there. IT IS KEY. And everyone has 2 minutes, yall. Also, no need to bring up the fact that we probably all pigged out for a good day or so (+10 days) and could use a bowl full of nutrition coated in balsamic gold.

Many pictures coming your way next time! We had an incredible week with family and I cant wait to share a glimpse of our week with you ??? *Nutritional facts are for 1 of 10 servings*
- 28oz can organic diced tomatoes
- 1½ cups cooked quinoa
- ¾ cup peas
- 1 can corn (drained)
- 1 can kidney beans (light or dark)
- 1 can black beans (drained and rinsed)
- 1 head romaine lettuce (shredded/chopped)
- 3 green onions (diced)
- ¼ cup olive oil
- ¼ cup balsamic vinegar
- ½ tsp onion powder
- 1 tsp honey
- 2 cloves garlic
- ½ tsp salt
- ½ tsp pepper
- Combine all salad ingredients in a large bowl and chill in the refrigerator (about 5-10 minutes).
- While salad chills, combine all dressing ingredients in a blender or food processor and pulse until smooth.
- Poor over salad and toss.
- Serve immediately or store in the refrigerator.
