Creamy Feta Veggie Bites
Serves: 12-14 bites
  • 1 cucumber
  • ½ pint grape tomatoes
  • ½ cup feta cheese (I used tomato & basil flavor)
  • 2 tbsp. Greek yogurt
  • 1½ tbsp. skim milk
  • ¼ tsp. garlic powder
  • ⅛ tsp. dried basil
  1. Run a fork along all sides of the cucumber (to create design) and slice thinly. Cut tomatoes in half and set veggies aside.
  2. Combine cheese, yogurt, milk and seasonings in a small food processor and pulse until well combined. You may need to use a spatula in between pulsing to remove mixture from the sides of the food processor.
  3. Add about 1½ tsps mixture to cucumber slice, top with half tomato and repeat until all veggies are used.
  4. Serve immediately or store in the refrigerator, covered.
