Easy Bean and Veggie Quinoa Salad with Homemade Balsamic Vinaigrette

Ingredients
  • SALAD
  • 28oz can organic diced tomatoes
  • 1½ cups cooked quinoa
  • ¾ cup peas
  • 1 can corn (drained)
  • 1 can kidney beans (light or dark)
  • 1 can black beans (drained and rinsed)
  • 1 head romaine lettuce (shredded/chopped)
  • 3 green onions (diced)
  • DRESSING
  • ¼ cup olive oil
  • ¼ cup balsamic vinegar
  • ½ tsp onion powder
  • 1 tsp honey
  • 2 cloves garlic
  • ½ tsp salt
  • ½ tsp pepper
Instructions
  1. Combine all salad ingredients in a large bowl and chill in the refrigerator (about 5-10 minutes).
  2. While salad chills, combine all dressing ingredients in a blender or food processor and pulse until smooth.
  3. Poor over salad and toss.
  4. Serve immediately or store in the refrigerator.
Notes
If you are making this salad ahead of time, combine all ingredients except lettuce. Wait to toss in right before serving for the freshest salad crunch!
