Feta Veggie Bake

Serves: 6 servings
  • 2 roma tomatoes (sliced approx. ½ inch thick)
  • 1 cup minced kale
  • ½ cup minced carrots (approx. 2 small carrots)
  • 1 cup sweet potatoes
  • ½ small onion (sliced)
  • ¼ cup extra virgin olive oil
  • 2 cloves garlic
  • 3 tbsp. crumbled feta
  • 1-2 tbsp. Delallo Balsamic Glaze(heavy drizzle as pictured)
  1. Preheat oven to 350 degrees and begin preparing ingredients. Slice onion and tomatoes and mince carrots & kale separately in food processor and set all aside.
  2. Add garlic and oil to food processor and mince and set aside.
  3. Layer ingredients in a small casserole dish beginning with half sweet potatoes. Spread until bottom of dish is covered, add onion slices and then tomato and brush on garlic oil mixture over tomatoes.
  4. Add kale layer, carrots and then cover with remaining sweet potatoes.
  5. Top with feta andDelallo Balsamic Glaze& cover with aluminum foil and cook for 30 mins.
  6. Allow to cool for 5-10mins and serve.
