Havarti Pesto Flatbread Pizza- 100th Post!

Serves: 4 servings
  • ½ package Soppressata (1.5 oz)
  • 4 oz. mushrooms, diced
  • 2-3 tbsp. sundried tomato pesto (or similar)
  • 1 Stonefire Pizza Crust
  • 5 oz. Havarti cheese, shredded
  • ¼ cup shredded parmesan
  • 1 tsp. olive oil
  • salt & pepper to taste
  1. Preheat oven to 375 degrees.
  2. Place pizza crust on a baking dish and spread pesto over the pizza crust. Add cheese, reserving a handful for the final layer.
  3. Pour olive oil into a small sauté pan over medium heat and add mushrooms. Season generously with salt and pepper.
  4. Cook until soft (about 2 minutes) and then scatter them over the cheese.
  5. Tear Soppressata into pieces and add over the mushrooms and then add the remaining cheese and more salt and pepper.
  6. Place in oven and cook for 10 minutes or until cheese bubbles.
