Mini Caprese Pizza

Serves: 6 mini pizzas
 
Ingredients
  • 3 English muffins
  • 6 oz. fresh mozzarella, sliced
  • 5-6 fresh basil leaves, sliced in ribbons
  • 2 roma tomatoes or 1 large tomato
  • olive oil
  • Balsamic vinegar, I use my favoriteDeLallo Balsamicdrizzle
  • Salt + Pepper
Instructions
  1. Preheat oven to Broil setting.
  2. Slice English muffins horizontally and toast until slightly browned and drizzle each slice lightly with olive oil.
  3. Prep tomatoes and cheese. Add 2-3 thin slices of tomato to each English muffin half and sprinkle lightly with salt and pepper. Add one slice mozzarella to each muffin and place on baking sheet and into the oven until cheese is melted (about 5-6 minutes).
  4. Remove and allow to cool. While cooling, slice basil into ribbons and add the ribbons over top of the melted cheese.
  5. If desired, add one more sprinkle of salt and pepper and drizzle with DeLallo balsalmicdrizzle or other balsamic vinegar.
  6. Serve!
Notes
Pro tip: Add your mozzarella ball to the freezer for 10-15 minutes before use and it will slice a lot easier!
