Monterey Jack Tomato Poppers w/ Avocado Sauce

Serves: 20-30 poppers
  • Poppers
  • 1 pint heirloom tomatoes
  • 1 head butter lettuce
  • 4 oz. Monterey Jack cheese
  • Spicy Avocado Sauce
  • 1 Avocado
  • ¼ fresh cilantro (packed)
  • 1 chipotle pepper in adobo sauce
  • ⅔ cup greek yogurt
  • 1 tsp. chipotle tabasco sauce
  • 1 tsp. lime juice
  • pinch of salt
  1. Poppers: Tear butter lettuce into small bite sized pieces, slice tomatoes in half and cut cheese into small cubes. Assemble by laying tomato half flat-side down, then place the lettuce on top of tomato, cube of cheese and remaining tomato slice (again, flat-side down as pictured). Pierce each layer and place in the refrigerator to chill.
  2. [b]Sauce: [/b]In order, place all sauce ingredients in a small food processor or small bowl with an immersion blender and pulse until smooth and creamy.
*If using regular toothpicks, you may need to first pierce a hole in the tomato on the bottom layer to allow easy stacking without squashing the bottom layer tomato.
