Pork and Cheddar Flatbread Sandwich
Serves: 3 sandwiches
  • 2-3 lb. shredded pork
  • 3 pieces of flatbread
  • 2 roma tomatoes, sliced thinly
  • 6 tbsp.avocado sauce
  • ½ cup white extra sharp cheddar
  • salt + pepper, to taste
  1. Prepare pork usingthese directions, and allow to cool. Shred and set aside.
  2. Set oven to broil.
  3. Slice roma tomatoes with a mandolin slicer or slice very thinly.
  4. Shred cheese and set aside.
  5. On one side of each flatbread, add 2 tbsp. avocado sauce, third of shredded pork, and cheddar.
  6. Broil until cheese melts (about 1-2 minutes) and then remove and add tomato slices.
  7. Finally, top each with desired amount of salt and pepper, close and serve.
The pork directions are included with a recipe for pork pizza, however, only use the pork instructions for this sandwich. Adjusting cook time may be necessary depending on the size of pork cut. The best rule of thump is to ensure inside reaches 145 degrees.
The avocado sauce will keep in the refrigerator for up to two weeks in a well sealed container (such as a mason jar), but will naturally separate. Stir if separation occurs, before spreading on bread.
Amounts may differ on your own tastes, so feel free to do as little or as much of each ingredient as you like!
