Chipotle Crock Pot Shredded Chicken

  • 2-3 lbs. chicken breast and thighs (I used enough to cover the bottom of my 6qt crock pot)
  • Chipotle Sauce1 cup yogurt
  • ¼ cup cilantro
  • 3-4 chipotle peppers
  • 1 tbsp. adobo sauce
  • ¼ cup lime juice
  • 5 garlic cloves
  • 1 tsp. salt
  1. Place chicken in the bottom of the crock pot and set aside.
  2. Combine all sauce ingredients into a mini food processor or blender and pulse until fully blended.
  3. Pour sauce over chicken and arrange chicken until all sides are evenly coated and cover.
  4. Cook on low for 8hrs and then shred chicken with fork. The chicken should tear easily.
  5. At this point you can serve immediately, or allow to soak up the juices even more.
  6. Store for up to 1 week or freeze leftovers in a sealed container for later use.
I like shredding the chicken at about 7.5hrs (if I am home) and allowing the shredded chicken to marinate in the juices for the remaining time on warm :)
