Crock Pot BBQ Beef Stuffed Peppers

Serves: 6 peppers
  • 1 lb. ground beef
  • 1 cup quinoa
  • 6 bell peppers, tops & seeds removed
  • 1½ cup BBQ sauce
  • 1 cup pinto beans
  • 1 small red onion, diced
  • ½ green onion, chopped
  • 1 tsp. granulated garlic
  • 1 tsp. cumin
  • ¾ tsp. chili powder
  • ½ tsp. red pepper flakes
  • ½ tsp. Himalayan salt
  • *optional toppings: avocado, white cheddar, cilantro, diced tomatoes, additional bbq sauce
  1. Add all ingredients, except peppers, to a large bowl and mix with hands (or spoon) to combine.
  2. Add water to the crock pot, about ¼ cup or enough to cover the bottom.
  3. Spray the sides of the pot with olive oil spray.
  4. Horizontally slice off the tops of the peppers, remove seeds and place in crock pot.
  5. Fill each pepper with mixture until bowl is empty or peppers are full.
  6. Cover and cook on low for 8 hrs.
*I used a 6qt crock pot to be able to fit 6 peppers
*Depending on the size of the peppers, you may have a small amount of mixture remaining. Just add extra the top of the peppers, if you can!
