Smoky Chicken Chili- Vegetarian option!

Serves: 6-8 servings
  • 1.5-2lbs chicken, thawed
  • 2 tbsp. chili powder
  • 1 tbsp. cumin
  • 2 tsp. onion powder
  • 2 tsp. garlic powder
  • 1 tsp. Himalayan or sea salt
  • 1 tsp. turmeric
  • 1 lrg. red onion, diced
  • 1 lrg. sweet potato, peeled & diced
  • 1 cup corn (frozen or otherwise)
  • 15 oz. (or 2 cups) red kidney beans, drained if canned
  • 15 oz. mild chili beans, lightly drained
  • 28 oz. diced tomatoes
  • 15 oz. tomato sauce
  • 1 cup quinoa
  • 2-4 cups chicken broth (vegetable broth for vegetarian option)*
  • Optional Toppings: Greek yogurt, sour cream, green onion, cilantro, avocado, cheddar
  1. Place chicken in the bottom of slow cooker and sprinkle all seasonings over the chicken.
  2. Add remaining ingredients, stir lightly to combine, cover and cook on low 8-10hrs.
  3. The chili will become thicker the longer it cooks.
  4. Vegetarian option:
  5. Place all ingredients (sans chicken) in the crock pot and stir. Be sure to use vegetable broth in place of chicken broth and cook on low for 8hrs.
*If thicker chili is preferred, start with 2 cups broth, or for thinner chili, use up to 4 cups. Either way the chili is fairly thick after cooking for the 8-10hrs on low.
