Crispy Baked Salmon w/ Herb Sauce

  • 4 4-5oz salmon fillets
  • ¾ cup panko bread crumbs
  • Salt + Pepper
  • ⅓ red onion
  • 5 cloves garlic
  • 1 green bell pepper
  • Half an avocado
  • ½ packed cilantro
  • 2 'triangles' Happy Cow Queso Fresco Chipotle Cheese
  • 1 Tbsp. olive oil
  • Olive oil spray
  1. Preheat oven to 400 degrees.
  2. Add ingredients 4-10 (onion through olive oil) to food processor and blend until smooth.
  3. Prepare salmon fillets by patting dry with a paper towel.
  4. Season with salt and pepper.
  5. Add 1-2 tbsp. sauce to top of salmon until covered completely.
  6. Divide panko evenly and top each fillet of salmon until coated.
  7. Spray olive oil over tops of panko and add to oven.
  8. Cook 8-10 minutes until salmon is cooked and panko has begun to brown.
  9. If necessary, broil for about 60 seconds until panko is a golden brown.
  10. Serve immediately.
