Chewy Berry Chocolate Oatmeal Bars

Ingredients
  • 11/4 cups oats
  • ½ cup almonds, chopped
  • ¼ cup dried cranberries
  • ¼ cup raisins
  • ½ cup unsweetened coconut chips
  • 2 tbsp. chia seeds
  • ¼ cup maple syrup
  • ½ cup skim milk
  • ½ cup 100% pomegranate juice
  • 1 egg
  • 1 tsp. cinnamon
  • ½ tsp. Himalayan salt
  • ¼ tsp. ginger
  • ¼ tsp. turmeric
  • ¼ cup mini semi-sweet chocolate chips
Instructions
  1. Preheat oven to 350 degrees.
  2. Add all ingredients in a large bowl and stir to combine. Spray 9x9 pan with cooking spray and pour ingredients into pan.
  3. Bake for 25 minutes.
  4. Remove from oven and allow to cool completely before cutting into bars.
Notes
The nutrition label reflects 12 bars, however, if you cut them into 15 bars, the nutrition will change/decrease and they will be around the size of a Lara Bar
