Buffalo Chicken Rainbow Bowl

  • 2 cups Buffalo Chicken
  • ½ cup cooked quinoa (or any grain)
  • ½ cup carrot ribbons (about 1 carrot)
  • 2 tbsp. low fat feta
  • ½ cup shredded cabbage
  • 1 cup baby spinach
  • ½ cup cherry or heirloom tomatoes
  • 1⅓ cup purple cabbage
  • 4 tbsp. Chipotle Ranch Greek Yogurt (or other ranch)
  1. Prepare veggies as instructed and divide ingredients between two bowls evenly.
  2. Drizzle the yogurt ranch over the top of each bowl and serve!
  3. If you care able the fancy drizzle look, just add the yogurt to a plastic bag, cut a tiny corner hole in the bag and pipe over the bowls. Easy and impressive ;)
