Sun Dried Turkey Pesto Wraps

Serves: 4 wraps
  • 4 flour tortillas
  • 2 tbsp. sun dried tomato pesto
  • spinach* (see notes)
  • ½ lb. Jennie-O Sundried Turkey Breast
  • 1 avocado, sliced
  • 4 oz. chipotle jack cheese, or similar
  • olive oil spray
  1. Heat sandwich griddle, or pan to medium high.
  2. Spread pesto evenly among all four tortillas and place small handful of spinach on top.
  3. Add each layer in order listed above and fold each side of tortilla to cover ingredients and spray each side of tortilla with olive oil spray.
  4. Place tortilla seam down on the griddle and allow to cook until browned and cheese has melted (about 1-2 minutes per side).
  5. Slice in half and enjoy!
*the spinach is delicious if wrap is eaten in the same day, but we found that it didn't pack the best for lunches. Recommend omitting spinach if making lunches ahead, or add right before serving :)
