Serves: 24 bites
  • 1 cup raw almonds
  • ½ cup toasted cashews
  • ½ cup toasted coconut chips
  • 1 ½ cup pitted dates, prior to soaking
  • 1 cup dried blueberries
  • 1 ½ tsp. pure vanilla extract
  • 1 tsp. lemon juice
  • ¼ tsp. kosher salt
  1. Begin by placing dates in a bowl and covering with warm water and allow to soak for 15-30 minutes.
  2. Place soaked dates and all remaining ingredients in a food processor and pulse until a sticky dough-like mixture has formed. Remove mixture shape into about 24 balls/bites. *See notes for larabar version
-if you want them to be just like tradition larbars, place parchment paper into a small square dish and press mixture until an even layer forms about ½ inch- ¾ inches deep. Cool for about 15 minutes and then slice into about 12 bars.
