Creamy Cheesy Chicken Casserole

  • 1 cup cooked chicken (shredded)
  • 9 corn tortillas
  • ½ cup reduced fat sour cream
  • ½ cup fat free plain yogurt
  • 1 cup salsa
  • 2 tbsp. homemade taco seasoning (or other taco seasoning)
  • 1 onion
  • 2 oz. ⅓ less fat cream cheese
  • 1 15.5 oz. can black beans (drained)
  • 1 cup corn
  • 1½ cup cheese
  1. Preheat oven to 375 degrees.
  2. Add cream cheese, taco seasoning, onion, salsa, sour cream and yogurt to food processer, blend on high until smooth and set aside.
  3. Add 3 corn tortillas to a nonstick 9X13 dish (or coat lightly with olive oil spray). Spread 1 cup of mixture to cover tortillas. Layer half of beans and corn and then add half the shredded chicken. Repeat the layer.
  4. Complete with final three tortillas, remaining sauce and top with shredded cheese.
  5. Cover and cook for 25 minutes and then uncover for the final 10 minutes.
  6. Allow to set for 5-10 minutes and serve.
-I used a rotisserie chicken to cut down on prep time
-I used a mix of mozzarella and extra sharp cheddar for the cheese
-Try meatless, by adding more veggies instead of chicken!
-Topping options: Cilantro, green onion, tomato or more salsa, avocado etc.
