Fajita Steak Bowls

Ingredients
  • .75 lbs. steak (sliced in strips)
  • ½ cup corn
  • ¼ cup peas
  • 1 green pepper (sliced)
  • 1 yellow pepper (sliced)
  • 1 medium onion (sliced)
  • 1 cup grape tomatoes (halved)
  • ½ cup quinoa
  • ½ cup skim milk
  • ½ cup low sodium chicken broth
  • ⅛ cup cilantro (chopped)
  • 1 green onion (chopped)
  • SAUCE
  • ¼ cup fat free plain yogurt
  • ½ tsp. cumin
  • ¼ tsp. smoked paprika
  • ½ tsp. chili powder
  • ½ tsp. garlic salt
  • ½ tsp. Worcestershire
  • ½ tsp. water
Instructions
  1. Prepare quinoa by adding to milk and broth mixture, and bring to boil. Cover and simmer for 15 minutes. Mix in cilantro, corn, and peas. Set aside.
  2. Sauté steak in olive spray until cooked to desired amount and set aside. Add peppers and onion and cook until tender.
  3. Add all sauce ingredients to food processor and pulse until smooth.
  4. Divide quinoa evenly among bowls, add vegetables and meat.
  5. Top with desired sauce and chopped green onion.
