Creamy Cranberry Cheese Spread

Ingredients
  • ⅓ less fat cream cheese
  • crushed or chopped pecans
  • Cranberry Sauce
  • 12 oz. bag fresh cranberries
  • ½-3/4 cup brown sugar*
  • 2 tbsp. 100% orange juice
  • ½ tsp. all spice
  • 1 tsp. cinnamon
Instructions
  1. Add sugar, spices and orange juice to a small sauce pan and bring to a boil.
  2. Add cranberries, cover and lower heat to medium, stirring occasionally.
  3. Allow to cook about 3-5 minutes or until almost all cranberries have burst and liquid has reduced.
  4. Set aside and allow to cool.
  5. Add cream cheese to a food processor or mixer and allow to whip (or you can do it by hand).
  6. Add ¼ cup of cooled cranberry sauce and fold in, combining slightly.
  7. Chill until ready to serve with remaining cranberry sauce and crushed pecans on top or on the side.
Notes
1. I used ¼ cup of brown sugar and the cranberry sauce was sweetened enough for my taste, however, if you like things extra sweet, you could add up to ¾ cup sugar to sweetened to your liking.
