Make sure you read this with a nasally accent (<-ew) because this gal is sick again…or rather, maybe never got better?  Either way, I get all heart-eyed at veggies when I am under the weather, but less in the raw sense and more in the perfectly seasoned-covered in feta-and hit with a ogarlicy olive oil punch-type.  Insert ?Feta Veggie Bake?.

This quick and easy bake with go perfectly as a side for your chicken, pork, steak, you name it!  Let’s utilize all those crockpot sweet potatoes we made and layer in the flavor!  The food processor will also be your best friend with this dish to keep things snappy and easy, naturally my favorite words in relation to dinner, and this awesome contraption has continued to be my life saver.  If you haven’t grabbed yours yet, you are probably giving chopping YEARS of your life. Utilize your chopping contraption for the carrots and kale in this recipe as well as the garlic oil (garlic cloves + olive oil). My guess is, aside from that heavenly later of feta atop this veggie wonder bake (its affectionate name) was the drizzle of perhaps my favorite short cut ingredient EVER. DeLallo Modenacrem Balsamic Glaze.

Balsamic glaze is not on the list of Most Difficult Things To Make Ever, but it is certainly time consuming.  Although I have made it several times, the whole time consuming thing means that it is rarely made in my real life.  The obvious dilemma being, balsamic glaze is EVERYTHING and can and should be used in every meal possible.  Breakfast. Lunch. Dinner. Dessert. On your oatmeal? HECK YES. Ham sandwich? DELISH. Chicken and veggie bowls? Peeeerfection. Scoop of ice cream to hit the spot? Ingredients
  • 2 roma tomatoes (sliced approx. ½ inch thick)
  • 1 cup minced kale
  • ½ cup minced carrots (approx. 2 small carrots)
  • 1 cup sweet potatoes
  • ½ small onion (sliced)
  • ¼ cup extra virgin olive oil
  • 2 cloves garlic
  • 3 tbsp. crumbled feta
  • 1-2 tbsp. Delallo Balsamic Glaze(heavy drizzle as pictured)
Instructions
  1. Preheat oven to 350 degrees and begin preparing ingredients. Slice onion and tomatoes and mince carrots & kale separately in food processor and set all aside.
  2. Add garlic and oil to food processor and mince and set aside.
  3. Layer ingredients in a small casserole dish beginning with half sweet potatoes. Spread until bottom of dish is covered, add onion slices and then tomato and brush on garlic oil mixture over tomatoes.
  4. Add kale layer, carrots and then cover with remaining sweet potatoes.
  5. Top with feta andDelallo Balsamic Glaze& cover with aluminum foil and cook for 30 mins.
  6. Allow to cool for 5-10mins and serve.
