Hi. My name is Brittany and I have a pizza obsession.  I could blame it on Steven, since he also suffers from the same obsession, but really this began long ago and I hit a new low when I discovered caprese.

From that moment on, everything that could remotely be made into the caprese form, was quickly conformed, transformed, remixed…you name it.  Those familiar flavors were going to be in every meal possible.  Which made me realize…there aren’t NEAR enough caprese recipes on this blog.  This problem will be rectified by the end of the summer, so don’t say I didn’t warn you.Mini Caprese Pizzas-perfect vegetarian quick snack or light dinner wiht all the flavors of summer and melty cheese! Something about the combination of fresh basil from my sweet little herb garden, plump season-perfect red tomato slices, soft creamy stretchy mozzarella and a drizzle of my one and only DeLallo reduced balsamic drizzle and I am in Italian summer heaven.  It could be my bucket list calling me about that European visit that I must have or the idea that fresh basil in my garden means summer time and all the pool trips, outdoor laying and limeade making that is in my future.  Either way, these little mini pizzas make my mind and heart happy and I am super thrilled about getting you on the caprese/crazy train!Mini Caprese Pizzas-perfect vegetarian quick snack or light dinner wiht all the flavors of summer and melty cheese! As we talked about, we will be using all the usual essentials to carprese everything but we are going to mix things up a bit too!  Here’s what we need to get our caprese fix quick and in a hurry:

  • English Muffin-Yep! we are grabbing my favorite quick muffin and switchin’ it up.  Slice the bad boy and toast him and he is good to go.
  • Olive oil- drizzle it over those toasted English muffins because olive oil is always a good idea
  • Tomatoes-use your favorite type (or bonus points if they are from your garden…I am so impressed with you!) and slice them up
  • Salt ‘n Pepper-we are makin’ all the flavors come alive with a generous sprinkle
  • Mozzarella-the most important part, obviously. Slap a slice on there and toss in the oven to broil for a few
  • Basil-throw those ribbons of basil on top because…pretty and another sprinkle of the S+P and you are good to go!

Are you even believing how easy this is?! You will be finding me parked by the pool covered in stringy mozzarella everyday for the rest of the summer.

Mini Caprese Pizza
 
Author:
Serves: 6 mini pizzas
Ingredients
  • 3 English muffins
  • 6 oz. fresh mozzarella, sliced
  • 5-6 fresh basil leaves, sliced in ribbons
  • 2 roma tomatoes or 1 large tomato
  • olive oil
  • Balsamic vinegar, I use my favoriteDeLallo Balsamicdrizzle
  • Salt + Pepper
Instructions
  1. Preheat oven to Broil setting.
  2. Slice English muffins horizontally and toast until slightly browned and drizzle each slice lightly with olive oil.
  3. Prep tomatoes and cheese. Add 2-3 thin slices of tomato to each English muffin half and sprinkle lightly with salt and pepper. Add one slice mozzarella to each muffin and place on baking sheet and into the oven until cheese is melted (about 5-6 minutes).
  4. Remove and allow to cool. While cooling, slice basil into ribbons and add the ribbons over top of the melted cheese.
  5. If desired, add one more sprinkle of salt and pepper and drizzle with DeLallo balsalmicdrizzle or other balsamic vinegar.
  6. Serve!
Notes
Pro tip: Add your mozzarella ball to the freezer for 10-15 minutes before use and it will slice a lot easier!
