How in the world is half of the year gone?! I have been so busy popping countless amounts of these cheesy poppers that the year has just flown by without me even realizing it 0_0 Okay, that was just the month of June, but still.
Do you have big plans for the Fourth? I believe we will be keeping things pretty relaxing and doing all the traditional fun activities such as, grilling out, getting far too excited about lighting multiple sparklers, soaring down a Slip and Slide (there are no children in our group…is that weird?), and large amounts of homemade froyo. In general, just laughing with the people I love and celebrating this pretty incredible thing we have called, freedom, thanks to incredible brave folks that willingly sacrificed. I am privileged to call a few of those soldiers family. If you are one of those selfless amazing people, THANK YOU!
As a foodie, my favorite way to celebrate anything is with something delicious! Well, these little poppers don’t disappoint. Juicy heirloom tomatoes with fresh smooth butter lettuce and creamy mild Monterey jack have a glorious little combo going themselves, but then you add the spicy avocado sauce and the little trio hits holiday status!
Poppers for the 4th = WINNING
Holiday weekends are the best for appetizer style munching! One holiday a few years ago we even did a full hors d’oeuvres bar with finger foods for dayzz. FAVORITE. ever. Cheesy poppers like these would have been perfect on that table…but instead of living in regret I will make up for it and pop these guys by the pool all weekend. Although these bright little things are definitely stealing the show, the main focus for me is that spicy avocado sauce they get to swim in <3
lost my mind got a tad obsessed with buying avocados like they are staple, who am I kidding? They are. And was using them in everything possible to beat that expiration date (aka super squishy and brown) when I decided these snacks needed some good ole avo love.
Spicy Avocado Sauce
Seven little ingredients make up this glorious blend and you can whip it up in the food processer with a few pulses and BOOM. Creamy, spicy and sporting a lovely green shade…because healthy.
- Lime Juice
- Chipotle Pepper
- Chipotle Tabasco
That’s it! Might I recommend a double batch? You haven’t seen the last of this winning combo because it may be (<definitely) making an appearance again soon, since spicy avocado goes with everything. (<duh)
Halve some little tomatoes, tear some butter lettuce and cube some cheese. That is all that stands between you and a colorful make-a-head snack for the holiday weekend. Well that and the sauce, but it will be done lightening fast so you really can’t even include that in the prep time 😉

- 1 pint heirloom tomatoes
- 1 head butter lettuce
- 4 oz. Monterey Jack cheese
Spicy Avocado Sauce
- 1 Avocado
- ¼ fresh cilantro (packed)
- 1 chipotle pepper in adobo sauce
- ⅔ cup greek yogurt
- 1 tsp. chipotle tabasco sauce
- 1 tsp. lime juice
- pinch of salt
- Poppers: Tear butter lettuce into small bite sized pieces, slice tomatoes in half and cut cheese into small cubes. Assemble by laying tomato half flat-side down, then place the lettuce on top of tomato, cube of cheese and remaining tomato slice (again, flat-side down as pictured). Pierce each layer and place in the refrigerator to chill.
- [b]Sauce: [/b]In order, place all sauce ingredients in a small food processor or small bowl with an immersion blender and pulse until smooth and creamy.
