Apples and I have a really weird relationship. Every time I approach the produce aisle they are just beaming their gorgeous hews at me; looking all spotless and organic and shouting out how much they need to be in my grocery basket. I eagerly agree practically every time.
And then we get home and they find themselves all lined up on a cute glass dish, perching proudly and waiting to be enjoyed.
Two weeks later…they sit, not as proud, still waiting to be enjoyed and looking a bit less spotless and more on the mushy side of organic than crispy…if you know what I mean.
For some reason those poor little guys are so easy to buy yet the execution of enjoyment never seems to occur while they are in their prime.
Instead of addressing my produce issues here, (therapy probably needed) I have found a way to treat the symptoms, and not the actual problem, in the sweetest way!
I give you Naturally Sweetened Apple Everything Spread!
As it’s title suggests, it is only sweetened with natural ingredients and makes perfect use of your poor little apples staring at you from your kitchen table. It basically tastes like apple butter which is among one of my favorites. My grandma introduced it to me as a kid along with pimento cheese (?) and split pea soup. I have been a fan ever since! I guess I had a love for food from a very young age.
Apple butter is so comforting to me. Its smooth texture and light sweetness takes me back to my childhood and it kills all my willpower to restrict downing the whole jar. A healthier option is certainly welcomed in my kitchen.
Enter: that apple goodness ^
This healthy crock pot version, is a cinch to make and is thickened by a surprise ingredient (chia seeds!? oh okay not a secret now ?). Naturally sweetened, meaning rich flavors like maple syrup, cinnamon, and honey infuse every little apple bit.
It is SO good…we have eaten it on toast, oatmeal, by the spoonfuls and in yogurt. I highly recommend them ALL and this recipe just happens to make 5 CUPS, so you will have plenty to go around ? However, if you don’t wish to embrace the idea of topping this on every meal, you may want to freeze half till you are ready. Ours never made it to the freezer ?
Gather those mushy apples and get busy!
*Nutritional Information is for 2 tbsp. (1 serving) of 15 servings*
- 8 apples
- ½ cup chopped dates
- ¾ cup chia seeds
- 2 tbsp. maple syrup
- 1 tbsp. cinnamon
- 1 cup 100% orange juice
- 2 tsp. vanilla extract
- ⅓ cup honey
- Use apple slicer to chop apples (peeling not necessary) and add to crock pot. Add remaining ingredients except chia seeds and stir. Set on low for 8-10 hours.
- Allow to cool and puree in a blender or food processor in batches until all mixture is smooth.
- Pour into a container and stir in chia seeds.
- Cover and place in refrigerator.
- After 1 hour place half in a smaller container to freeze for later.
- Serve spread on toast, oatmeal, yogurt etc.
