Pork and Cheddar Flatbread Sandwich incorporates salty seared shredded pork with a delicious avocado sauce and melty cheddar!
It has been the weirdest week. Our weather has been uncharacteristically (<longest word I know) rainy and stormy and windy and I know for a fact I do not live in Seattle so WHAT’S GOING ON Georgia?! And I just realized I began this post talking about the weather. Sorry I am lame guys, but the causes of the weather are my real issue here. Allergies acting up, morning headaches and the desire to do absolutely nothing have haunted me all week! So, lack of energy has turned into lazy and lazy has turned into needing comfort food which in turn is leading to the making of these beauties.
To be clear, that last part is not bothering me one bit.
GUYS. The salty spiced tender pork is incredible and should not be swapped with another meat. I mean, you can, but I beg you to take a few extra steps and indulge. Before finding this recipe for pork, I always used the slow cooker method but every recipe left a little to be desired. But now, with a salt and pepper spice coating and quick sizzling sear on the stove top, then finished in the oven for a tender juicy meat inside, this gal is whistlin’ a different tune! So, pork is a must and you will be happy about it.
I told you guys this sauce would be making another appearance. I was pretty confident this green beauty wasn’t a one hit wonder but rather the type of green sauce you keep in your refrigerator on the regular and slather over, on, in everything! Or that could just be me ? but let’s pretend you still have your jar too and we can be spicy avocado sauce loving twins (!!). The slight zingy cream layer this sauce adds to the salty pork is a combo I won’t be forgetting anytime soon plus…COLOR. Necessary for any summer meal.
You better be believing this flatbread wonder requires a cheesy layer. You know what I mean. I know we have that cheese loving connection that means we both stand in line at our local sandwich shop finding the cheesiest sandwich photo on the menu and praying it isn’t one of those “actual appearance may vary” situations. My sandwich has 7 cheese strings on the menu and 7 cheese strings it must have on my plate! Ahem. Sorry, I get a little elevated when we are speaking of cheese. Best thing about making your glorious flatbread sandwich at home? Cheese layer ratios are totally up to your discretion 😉
I love finishing my melty sandwich off with some fresh ingredients such as summer ripe tomatoes! That juicy fresh layer adds some balance to my massive cheese layer and brings more color to the party, which obviously we aren’t hatin’ on.
It’s Friday and we need soft chewy flatbread, smeared with spicy avocado sauce, topped with salty tender shredded pork, a necessary cheesy cheddar layer and some fresh bright juicy tomatoes…because healthy.

- Prepare pork usingthese directions, and allow to cool. Shred and set aside.
- Set oven to broil.
- Slice roma tomatoes with a mandolin slicer or slice very thinly.
- Shred cheese and set aside.
- On one side of each flatbread, add 2 tbsp. avocado sauce, third of shredded pork, and cheddar.
- Broil until cheese melts (about 1-2 minutes) and then remove and add tomato slices.
- Finally, top each with desired amount of salt and pepper, close and serve.
The avocado sauce will keep in the refrigerator for up to two weeks in a well sealed container (such as a mason jar), but will naturally separate. Stir if separation occurs, before spreading on bread.
Amounts may differ on your own tastes, so feel free to do as little or as much of each ingredient as you like!
