LOOK at that beauty, guys.  Not often do I taste test and say, “wow” but this is one of those times and we are ALL happy about it.  Rainbow vegetables paired up with our favorite lean ground turkey (HI ??Jennie-O!); coated with my homemade taco seasoning create this perfect base.  And then we get all crazy and throw in the fire-roasted tomatoes and evaporated milk and cheese, which bring creaminess and smoky depth.  Let it bubble away to the perfect thick sauce and pour over your favorite fluffy rice or quinoa.

Result? Dinner. Magic.

And while I embarrass myself with gushings of dinner magic, I may have referred to this dish as the best turkey dish to come from my kitchen to date.  Legitimate claim. {reference @wordslikehoneycomb on Insta} ?

Quality Ingredient Essentials

We know by now how important ingredients are in the whole concept of dinner = delicious thing and I would be remised to not mention that here! And all that complexity? Not actually complex at all when you use great ingredients!

  • chop & dice
  • sauté meat
  • add in veggies & sauté more
  • pour in the roasted tomato sauce
  • bubble for a while
  • pour over rice and top with cilantro for an all in one delicious meal!

Simplicity is key and obviously, the best recipes are the ones you can tweak to your own liking!  Enjoy this meaty sauce over quinoa, mashed potatoes, cauliflower rice, spiralized noodles –for a low carb option– or the best rice ever made in my new favorite kitchen appliance, the Instant Pot!

*Rice*

Our personal favorite was rice due to the incredible texture it creates between the rich sauce and tender rice.  *PRO TIP* I am able to do a half brown rice-half white rice mixture in the instant pot without tasting any difference ?.

*Cilantro + Cheese*

Our other preference was fresh cilantro loaded, obnoxiously, on top and a bit more cheddar for prettiness and because I’m obsessed.  The flavor duo is not to be reckoned with.

Ingredients
  • 16oz. Jennie-O Extra Lean Ground Turkey
  • 2 tbsp.Homemade Taco Seasoning(or similar)
  • 2 tsp. olive oil
  • 2 bell peppers, diced
  • 1 medium onion, chopped (about 1 cup)
  • 14.5 oz. can fire-roasted diced tomatoes
  • ½ cup broth (chicken or vegetable)
  • ½ cup evaporated milk (canned)
  • 1 cup extra sharp cheddar
  • salt & pepper, to taste (I used about 1 tsp. each)
  • Cilantro
  • Rice, cauliflower rice, spiralized noodles, etc.

  • (*Optional) -see notes
  • 1 tsp. corn starch
  • 2 tsp. water
Instructions
  1. In large skillet over medium heat, add olive oil and brush to coat the pan and add the turkey. Sprinkle on homemade taco seasoning and stir to combine. Break apart the meat into smaller pieces and allow to cook for about 3-5 minutes till cooked through.
  2. Add onions and peppers to the same skillet and cook for 3 minutes until vegetables are tender, stirring occasionally to keep from burning.
  3. Add tomatoes, broth and evaporated milk to the skillet and stir to combine. Cover and allow to simmer on low for 10-12 minutes until sauce has thickened. (add cornstarch mixture at this point, if doing so [see notes])
  4. Stir in cheddar and serve over rice, or other recommendations above and top with cilantro and more cheddar, if desired.
Notes
*depending on the type of fire-roasted tomatoes, adding cornstarch may be optional. If the brand of canned tomatoes you are using has a lot of liquid, the corn starch mixture may be needed to thicken the sauce.
