After such a nutrition-rich post on Tuesday, it only made sense to balance that out with some sweetness. I mean balance in diet is key, right? Glad we agree because I REALLY wanted to share this super easy, yet totally decadent dessert topping with you…enter Simple Berry Compote!
You may need to forgive me in advance for sharing this addictive-inducing berry compote with you because once you realize how easy it is and how a little sugar transforms some berries into complete topping luxury your waistline may be giving me the stank eye. #worthit
I was making berry compote long before I knew what compote was, but basically just consult the internet geniuses…or the ever-reliable Wikipedia if you want more deets. Or just trust me…its that berry stuff in the picture up there.
Ahh, I mean if ice cream weren’t delicious enough, this is the cherry on top…quite literally, actually. I made a cherry batch and also made a batch using blackberries and strawberries. After extensive taste testing, I couldn’t decide my favorite. You may need to help me decide on this one…
As I was stirring a simmering little pot full of bubbling berries, I couldn’t help but reminisce back to those days as a kid when my sister and I would get to hit up the dessert bar at the buffet restaurant. We didn’t care about class or quality. All we saw was good ole frozen yogurt and high fructose corn syrup in every form possible. We are talking m&m’s for dayz, sprinkles in rainbow colors, gummy candies and the ever popular fruit-filled toppings. Thinking back, I wonder how much actual fruit was in that unnaturally colored bowl of sugary syrup? ? It was the last thing on my mind when I piled it on an overly-filled dessert bowl, but now my cravings seek a bit more natural approach (well, most times ?).
Know what I found? High fructose anything is NOT a required ingredient to get simply incredible toppings for your ice cream indulgence. Nope. Just three ingredients 1) fruit 2) sugar and 3) water and BOOM- Berry Compote. I bet you could have even guessed those ingredients!
But before you think I have thrown all health-consciousness to the wind, I will say this is completely scrumptious on yogurt or oatmeal. Which would definitely justify having berry compote for breakfast ?. Dessert for breakfast, friends, it definitely has my stamp of approval!
Why are melty ice cream pictures sooo mesmerizing…now if that isn’t a Happy Thursday to you, I don’t know what is. Oh, and we are abstaining from the nutritional facts for obvious reasons this time, however, you can add less sugar to keep things more on the healthy side. Naturally sweet fruits, like strawberries are delicious with less sugar since they are great on their own. Perfect timing for strawberry season coming up soon!
- 2 cups chopped fruit (I used a mixture of blackberries and strawberries)
- ½ cup water
- ¼ cup + 2 tbsp. pure cane sugar (or any white sugar)
- Add fruit and water to a small sauce pan and bring to a boil.
- Lower heat to a simmer and add sugar. Stir and cover with lid partially (tilted) for 5 minutes.
- Remove lid and allow to simmer for 5-10 more minutes until mixture has thickened and water has absorbed (stirring occasionally throughout simmering).
- Allow to cool off heat for about 5 minutes before serving or serve at room temperature.
