Welcome to Monday everyone!
I know we are all happy to be here…because we are all morning people that sing while they grab their coffee and leave 5 minutes early just to see the sun rising while off to work!
Well, we could pretend I guess.
Fall is in full swing around our house and we are getting outdoors every chance we get to enjoy the slightly cooler temperatures and already changing colors. As you probably know from your own schedule, things are getting busy! But I wanted to drop by briefly this morning to share those little spiced apples with you as my way of forcing you into fall-like things. ?
Those little rings will cook in your oven on a low temp for hours and have your house completely filled with spicy apple things and you won’t believe there isn’t apple cider cooking! Throw in some burning candles and I am a goner folks!
Obviously, Fall is my favorite season, but that is partially because of all the ‘fall foods’ that completely infiltrate your home with harvesty goodness and curl-up-on-the-couch style dinners.
But first…these Spiced Apple Rings.
I grabbed a bag of assorted apples the other day with no clue what I was going to do with them, but knowing I couldn’t pass up all that colorful cuteness when it was on sale, I threw them in the cart.
Setting out fall decorations inevitably led my mind to spiced lovely things which brought to mind those apples again. I have always wanted to dry baking apples in little rings…because I have weird little dreams like that and it sounded like a great way to utilize those lovely, perfectly priced apples staring at me on the counter.
I was shocked with how quickly this prep happened and those cinnamon, nutmeg and ginger scents were hitting the kitchen in no time.
We will be snacking on these all week just as they are but I have ideas of chopping them up in my oatmeal, or dipping them in whipped cream or using them as yet another ice cream topping. Wow, two in a row…I didn’t mean to guys…?
But I promise, these little guys are delicious on their own and a lovely healthy snack to throw in your lunch to spice it up a bit (pun completely intended).?
Even if you don’t want to eat them, please cook them anyway…organic fall potpourri. Ohh…I think I am onto something.

P.s. For your viewing pleasure…some snapshots from our weekend ??
- 4 apples (any type)
- ½ cup orange juice
- 2 tsp. cinnamon
- ½ tsp. nutmeg
- ½ tsp. ground ginger
- 1 tbsp. honey
- Core the apples and slice as thinly as possible (about 1/16 inch) and set aside. Place orange juice, honey and spices in a bowl and whisk to combine.
- Spray cooling rack with non stick spray and place on a baking sheet (I needed 3 total baking sheets for 4 apples).
- Dip each slice in the bowl of spices, coating each side and place on the rack. Continue until all apples are on the baking sheet and place in a 200 degree oven for 2-2.5 hours until rings have reached desired texture. (see notes)
