I am a classic over-complicater. I don’t actually believe over-complicater is a thing, but it describes me perfectly. I can’t just make a turkey sandwich. It needs 15 spices and 7 layers and let’s not even get started with the bread options. But you know what, a great thing happened when Jennie-O turkey breasts entered my life. The Sun Dried Turkey breast to be exact. Exceptional flavor, and choosing my own perfect slice is simply satisfying all on its own. But….let’s be honest, I have to stay true to my ways 😉…at least a little.
Simple is better
To compliment (not over-complicate) we are adding my favorite type of pesto, cheese, avocado and a little spinach to make things complete. My oh, my you won’t be looking for any other ingredients. They simply are not needed and that turkey just SINGS 😍
Lunch dreams are coming true today and I am excited about it 💃. Lunch is always a difficult meal for me as my default is leftovers and needing to take my lunch with me to work, it needs to be easily packaged and sustaining. Sun Dried Turkey Possibilities
I was amazed by the juicy, spicy and super convenient aspect of Jennie-O’s Turkey breasts. Before you start throwing these delicious turkey breasts in the lunch category, hold your horses. ready to go and I never realized I would reach for it so many times in one week! IT saved the day for lunches and multiple dinners throughout the week. Its versatility is tied with flavor for my favorite aspect of the deli meats and I am still discovering new ways to serve it! Slice it up thinly and make a sandwich, cube it and put it in a salad, sear it a bit in the cast iron and serve it with eggs and veggies, there are just no ends to its delicious possibilities!
But the best part, is the meal doesn’t have to be complicated to be delicious and I believe these simple sun dried tomato turkey pesto wraps prove that fact. Completely scrumptious, but not a bit complicated and a cinch to pull together. Not to mention, they happen to be perfectly packable for lunch 💪. Lunches for almost the entire week, ready in under 15 minutes!
All the essential components present:
- Protein > turkey
- Salty flavor > sundried tomato pesto
- Fiber> spinach
- Healthy fats > avocado
- Energy carbs> tortilla wrap
- Dairy> cheese
- Fancy> grill marks
Indeed it has it all and sure to please your most difficult critic. Simple as it may be, the possibilities are endless and you can easily switch up the ingredients to your liking. Try hummus instead of pesto, or keep it lean and skip the avocado (not your best decision), greens hater? Skip the spinach leaves and try a spinach wrap!

- 4 flour tortillas
- 2 tbsp. sun dried tomato pesto
- spinach* (see notes)
- ½ lb. Jennie-O Sundried Turkey Breast
- 1 avocado, sliced
- 4 oz. chipotle jack cheese, or similar
- olive oil spray
- Heat sandwich griddle, or pan to medium high.
- Spread pesto evenly among all four tortillas and place small handful of spinach on top.
- Add each layer in order listed above and fold each side of tortilla to cover ingredients and spray each side of tortilla with olive oil spray.
- Place tortilla seam down on the griddle and allow to cook until browned and cheese has melted (about 1-2 minutes per side).
- Slice in half and enjoy!
