I don’t know about you but that always excites me…partly because of my Mexican heritage (<-not in the least) and partially because Taco Tuesday (uhh…oops) And mostly because eeeeasy.

Perhaps its the cheese talking, but taco flavors are perfection in our house and tacos just mean a party!  This time around I let my love of tacos and my strong tendency to make everything into the bowl form collide into Taco Toss Bowls and I believe the lack of leftovers proved it’s success.

Dinner success comes in another form for us too.  When the first words out of Steven’s mouth are “You wrote this down, right?” haha! This garlic hot sauce was nestled in my stocking at Christmas, because my mother-in-law knows my foodie self.  Ever since, I have been tossing it in meals here and there.  Although, since I tend to throw in ALL the spices I hadn’t tried the sauce on its own.  Well, tacos bring the lazy out in me and I decided to restrict myself to garlic sauce alone and the results were more than convincing.  Why in the world do I make things so hard on myself, when my lovely little garlic gold sauce wants to make my lazy girl dreams come true?!

Note on the Hot Sauce:

Before your get nervous about the hot sauce, don’t worry!  I am not the biggest hot sauce fan, myself.  Guess what…this hot sauce really isn’t that hot!  It’s garlic vibes totally transform that heat into flavor so you are going to love it. If you are still a little skeptical just start with a couple teaspoons and work your way up 🙂  I used about a tablespoon and a half in our recipe for added heat, but the recipe reflects what we used for low heat and ultimate flavor.

But my favorite bowl style recipes always mean I can increase the amount of topping options, which is obvi the best thing ever. We involved kale at one point to add to the healthy and it definitely gave this a more taco salad vibe.  Don’t make yourself crazy with the details though, this guy is meant to be easy.  Use what you have and enjoy taco Tuesday on more than just Tuesday.  Can I recommend six nights a week?  You’re right. Seven is better.

Serves: 4-5 servings
Ingredients
  • 1 lb. lean ground beef or turkey*
  • 2 bell peppers (chopped)
  • 1 onion (chopped)
  • ½ cup corn (frozen or fresh)
  • 15 oz. organic pinto beans (drained)
  • 1 Tbsp. Garlicky Hot Sauce (or similar)
  • 4 oz. Organic Mango Peach Salsa (from Aldi)
  • Optional toppings: Avocado, green onion, cilantro, cheddar
Instructions
  1. Cook quinoa according to directions on bag with broth (as in ingredient list) or water for lower calorie option and set aside. (OR) Try microwave version from this post.
  2. Add ground beef to nonstick large skillet over medium heat and cook about 5 minutes or until browned and add onion, peppers and sauce.
  3. Cook veggies with sauce and meat until tender (about 5 minutes).
  4. Add beans and corn and toss until heated through (about 3 minutes).
  5. Remove from heat.
  6. Add quinoa evenly to 4 or 5 bowls, top with taco mixture, ¼ of salsa and more hot sauce (if desired) to each bowl. Serve as is or optional toppings.
