That title is ridiculous, but this pizza is ridiculous levels of good. So-that’s all I got.
We do celebrations in our home. And when I say we do them, I mean we do them well and we do them often. You know those people that celebrate literally EVERY month of their first year of marriage, and post one too many photos on Facebook or Instagram, and annoy people with their over-display of affection? Those people are ridiculous.😑

And we are kinda those people. 🙈

We really try to keep it to ourselves y’all but when you marry your best friend it just kinda overflows and you just apologize to the public in general and head out to your next celebration of random days.
Forgive us. We know.
One such celebration [translation: multiple mini celebrations] happened this last weekend and a familiar inexpensive and unnamed, to keep what little credibility I have left intact, vice was calling our names. Being the foodie wife I am, I rose to the occasion to create a pizza worthy of celebration, no calorie spared. And I discovered…calories are GOOD. Add that to the list of things I wish I didn’t know.

Oh Friday…I have been looking forward to you since the last time you were here. And to celebrate our favorite day of the week-I bring you Spicy Bacon Cheddar Dip with Fried Gnocchi bites.

Yes, you read that correctly and it IS as good as it sounds.

Self-nominated Game Day chef here again to provide you with mouth-watering munchies during all those hours that will be spent watching people chase a ball this weekend. And that experience will most definitely be better with 87463 of these fried Gnocchi bites dipped in that spicy, salty cheesy bowl of love.

I definitely need to give my mama the credit on the inspiration of this recipe. I knew I wanted fried gnocchi but I texted her this: “what would you want to dip tiny crispy potatoes (she is a gnocchi newbie) in at a party?” and quickly received the reply: “something bacon and cheddar-ey”

Moms are good for EVERYTHING guys.

I mean…lightbulb! Why didn’t I think of that? Some foodie I am. What wouldn’t be good dipped in ‘something bacon and cheddar-ey’?!

So, listen to my mom, not me, and serve this luscious bowl of sharp cheddar cheese meets touch-of-spice-jalapeno meets salty bacon, whipped up together in a creamy dip that could serve as dinner.

Like, get a spoon and grab the bowl.

Don’t fall in love with this appetizer on looks alone though…because it comes together quickly and is ready to be served in less than 30 minutes!

SCORE.

A simple pan fry of ingredients, a mix of other ingredients + fried ingredients in the food processor and slab that goodness in a bowl and you are good to go.

If you have never fried gnocchi before, you are in for a treat! It cooks just as fast this way as it does in a bowl of soup! I am talkin’ you better watch them closely because they will be done in a jiffy for you!

If you are going to make this recipe for a crowd, I would definitely fry up two packages of gnocchi, since this sort of makes a TON of dip. And even if you love it as much as I did, and coat each gnocchi with dip to the point of creating a complete mess, you aren’t going to use up this dip with the eh…85 little gnocchi’s in a 16oz package.

Oh speaking of…we are all going to just agree that we don’t need super detailed nutritional facts on this recipe 0_o Because it depends on your guests’ appetite, but it makes about 3 cups of dip and I recommend adding it to a mini crock pot to keep melty and delicious!

Spicy Bacon Cheddar Dip with Fried Gnocchi Bites

Ingredients
  • 1-2 packages of regular gnocchi
  • 4 strips of bacon (chopped)
  • 1 jalapeno
  • ½ onion
  • ¾ cup reduced fat sour cream
  • 3 tbsp butter
  • ½ cup flour
  • 2½ cup skim milk
  • 1½ cup cheddar (or desired cheese)
Instructions
  1. Heat gnocchi in batches to allow gnocchi room to cook in a large skillet. Cook over medium heat until gnocchi brown and crisp and set aside.
  2. Add chopped bacon to skillet and allow to crisp. Place jalapeno and onion in food processor until minced and add to pan with bacon. Once tender, set aside.
  3. Add butter to skillet, and whisk in flour until crumbles have formed. Slowly whisk in milk until smooth and allow to simmer for 2-3 minutes, stirring when needed to keep from burning.
  4. Remove skillet from heat and stir in cheddar, allow to cool for 2-3 minutes and add to food processor along with bacon mixture and sour cream.
  5. Process until smooth and serve with gnocchi immediately or add to mini crock pot.
Notes
-Use two packages of gnocchi for larger crowds
-Garnish with chopped green onion, slices of tomato, more bacon, cilantro, more cheese (etc.)

If you grew up anything like me...you had deviled eggs at every holiday, event or church potluck.  They are a staple of southern society...and we ain't changin' it!

Those cute little yellow paprika-sprinkled eggs that cover every picnic table give a sense of stability that every get-together needs and we all know what to expect.  They don't offer  much of a surprise, but whether you love them or just kinda like them, I bet you will be grabbing at least one of those bite-sized goodies...no forks or spoons required!

Well, don't be scared my friends, but I am about to rock the deviled eggs boat a bit and throw these little cuties right at yo face.

Think traditional deviled eggs...but taken up like several notches with

chipotle peppers...

smoked paprika...

and BACON.

CAPS always necessary when BACON is involved.

I am not saying to break all potluck dinner code and throw out your mayo/mustard egg combo, but PLEASE give these a try!  I was skeptical my self until I whipped these up and ate 2 3 5 too many!

You guys should know me better by now...

I still kept a little familiarity in these with the addition of mayo-because nothing...NOTHING...gives the same creaminess as mayo.  But also threw in some Greek yogurt.

I know.

But I am not a fan and definitely could NOT taste it a bit.

I would not steer you wrong when bitter yogurt is involved, folks.  That would just be mean to you and your potluck.

Chipotle Bacon Deviled Eggs

Serves: 12 egg halves
Ingredients
  • 6 boiled eggs
  • 1 tbsp. bacon bits (real bacon)
  • 1 tsp. canned chipotle in adobo sauce
  • ¼ tsp. smoked paprika
  • salt + pepper (to taste)
  • 2 tbsp. + 1 tsp. mayo (with olive oil)
  • 1 tbsp. + 1 tsp. Greek yogurt (or plain)
Instructions
  1. Slice boiled eggs lengthwise (into halves) separating yolks into small bowl.
  2. Mash the yolks until small crumbles appear and add bacon, chipotle (minced finely), and seasonings.
  3. Once combined, fold in mayo and yogurt until smooth.
  4. Pipe mixture into egg halves and serve with toppings. *see notes*

Ahhh summer…the beaches…the sunny afternoons…the pool with your pretty fruity little drink. Such a paradise and beautiful season to get all tan in the sunshine and get that skin glowing!

Or you could be me.

And live in this sad indoors world of pale/ghostly/fair skinned folks that can’t seem to enjoy the sunshine for 10minutes without resembling a tomato.   Yes, this describes everyone in my household and we have about as much chance of tanning as an Eskimo. BUT on a lighter note, we DO love the food that summer brings and all its bright colors and flavors-no sun block needed!   15-Minute Party Corn is definitely one such dish!

With all those bright colors and its flavorful vegginess (uh…yeah spellcheck, that IS a word, c’mon) make a perfect side for those back porch dinners or covered dish for your next grilling get-together! Something magical (oh yes I did) happens when all these fresh ingredients heat up together with a spike of butter and simple  seasonings that bring those flavors alive in the yummiest sense.

And do I really even have to talk about the whole 15-minutes and it’s in yo’ mouth thing? No, I think not because that is probably exactly why you are printing this recipe. It’s Friday! You don’t want to be cooking all night! Not to mention, this is the sort of side that is going to make you feel good about eating that big ole’ burger you have already been daydreaming about.

Ingredients
  • 1 bag frozen corn
  • 1 red onion
  • 1 orange pepper
  • 1 green pepper
  • 1tbsp butter
  • 1 can black beans (drained)
  • 1 3oz bag bacon bits (the real bacon, NOT imitation)
  • Salt + Pepper (to taste)
  • Cilantro (for serving)
Instructions
  1. Melt butter in large skillet on medium heat and add diced onion and pepper.
  2. Allow to cook for 2-3 minutes or until tender.
  3. Add corn, drained black beans and bacon bits and stir.
  4. Lower heat and cook for 5-10 minutes or until corn is cooked.
  5. Season the corn mixture, with salt and pepper and serve with cilantro on top.

So I was lying in bed super late the other night (read: 10:30…that’s late right?), not counting sheep, not daydreaming and not planning our next vacation. Nope. That is what normal people do. I, on the other hand, was dreaming up Toasted Mediterranean Avocado Hummus.

Before you get all impressed with my dedication to this blog, I need you to know I had selfish intentions. First of all, I love BREAD. Because all carbs basically whisper my name 100% of the time (blessing and curse), but also because it has been a hot minute since I had any type of toast in my life. I KNOW. What kind of person doesn’t have toast on a regular basis? Me. I am that person.

So, the toast, THAT was definitely happening, but I couldn’t decide what delicious spread was going to reunite me with that golden toast. I knew I wanted to pile on ALL.THE.THINGS. because if this wasn’t a dead giveaway I tend to go just a bit overboard on toppings. So before the internal debate had gotten too intense, a light bulb went off, and my glorious kitchen bestie, the FOOD PROCESSOR, appeared in my head…angels singing and all! Hummus was definitely the answer to my toppings conundrum and the spread to unite me with my long lost craving of toast.

Those lovely chickpeas all cozy next to my favorite, the avocado, as well as a touch of the salty—feta and Kalamata olives—and some fresh staple ingredients blend into a dense spread fit to withstand endless toppings!

This hummus had Steven and I “mmmmm-ing” the whole time we hovered over the bowl like animals sat at the table like the classy adults we are and tried all the combinations of toppings we could think of!

Spoiler Alert: They’re ALL good.

Go raid your pantry of all the yummy things and get that buffet ready for a Mediterranean Avocado Hummus party! Whether pita, toast… errr spoon… (not that I am speaking from experience or anything)

This hummus will leave your mouth in Mediterranean party mode and add that flare you need to get through your Wednesday and closer to FRIDAY.

Toasted Mediterranean Avocado Hummus

Ingredients
  • Hummus
  • 1 can garbanzo beans, drained
  • 3 cloves garlic
  • 1 avocado
  • 3 leaves fresh basil
  • 5-6 Kalamata olives
  • 3 tbsps plain yogurt
  • 2 tbsps feta cheese + extra for serving
  • Pepper (to taste)
  • 1 tbsp lime juice
  • 2 tbsp milk
  • Toast
  • 1 loaf French bread
  • Olive oil spray
Instructions
  1. Add all ingredients to food processor and blend on high until combined.
  2. Scrape sides of food processor as necessary and pour into dish.
  3. Slice bread in ¾-1 inch pieces and spray olive oil on each side.
  4. Place on flat top grill or large skillet for 1-2minutes per side or until slightly brown.
  5. Serve bread with a generous layer of hummus and any desired toppings.

Sliced Boiled eggs, fresh corn, sliced grape tomatoes, green onion, olive oil, bacon, basil, feta-the options are endless- so enjoy and have fun with it!
