I am just lazy and sometimes I just want to eat home cooked meals that are good for my bod and that I didn’t have to cook.

Don’t get me wrong, I really love to cook! I love getting creative and combining different flavors to see what happens, and trying new types of food that I never have before. I love how my kitchen feels like my space. It is where my imagination comes alive and where I try to always challenge myself to do better. I love finding the balance between healthy and indulgent and creating meals that taste so good that they COULDN’T be healthy?!

But.

Oh yes. There had to be a, but. Oh stop, you know which but I am talking about!

Sometimes I come home and even a bowl of cereal just seems too hard.

Alas, I must persevere because this girl is STARVIN’ and we gots ta’ eat.

This is when the kitchen magic must happen and I need that magic to work within 30 minutes.

Soups are a good go-to for these nights, where you need to be able to throw everything in a bowl and it taste good and leave you with a good ole “ahhh!”

Soups are definitely good for that, but for me…I am more like a soupy pasta girl. Healthy ingredients sneaked in together with seasoned goodness, some herby love and topped with parmesan for good measure all cozied up in a bowl to be eaten while curled up on the couch…er…at the dinner table like the adult you are.

Although not in the running for any beauty contest, this bowl of chewy satisfying flavors surprised Steven and I both. Like we literally almost spoke over each other when we said “Wow, this is actually good!”

Ingredients
  • 1 lb. ground meat (I used turkey)
  • 3 cups chicken or vegetable broth
  • 6 celery stalks
  • 8 oz. baby carrots
  • 2 small onions
  • 15 oz. great northern white beans
  • ½ cup chopped fresh cilantro
  • 10 oz. can diced tomatoes and green chiles
  • 2 cups short cut pasta (I used pipe rigate)
  • 1 ½ tbsp. Chipotle Tabasco sauce
  • 2 tbsp. Worcestershire
  • 1 tbsp. olive oil
  • Salt & Pepper (to taste)
  • Optional Toppings:
  • Parmesan
  • Green onion
Instructions
  1. Heat a Dutch oven or large stock pot over medium-high heat. Add olive oil and begin to brown meat.
  2. Add carrots, celery and onion to a food processor or blender and pulse until finely chopped.
  3. Add to browned meat and allow vegetables to soften (about 5-7 minutes).
  4. Add remaining ingredients and lower heat. Allow to simmer for 10 minutes stirring occasionally, remove from heat and serve.

Too often I come home and just stare into the refrigerator.

Food blogger or not, 👉this girl👈 never be one to brag about her preparation skills because they are certainly lacking.

And Sunday after church is no time to try out all my kitchen gadgets with new-fangled ideas and inspiration from the Italian guru Giada. Nope, it is time to make something healthy-ish and quick that requires no more than a little chopping and pouring.

Somehow the inspiration just doesn’t seem to flow when I am HANGRY and Steven keeps peeking around the corner to see if I have made any progress towards something edible.

Perhaps it was the fall air making its way through our kitchen door screen or the 5th candle I had lit in the kitchen (I am way past obsessed), but the juices were flowing and I knew exactly what we were going to have today and it conveniently utilized all the ingredients we already had. SCORE.

Welcome to Meatless Monday!

It's not too often we can say that around these parts, so I am taking full advantage.

Not to mention, Frittata?!  I mean heyyy FANCY.  But while we can all feel sophisticated by making things such as Frittatas and participating in trendy things such as 'meatless Monday' that doesn't mean we have to work for it.

No, my friends, a frittata is a glorified omelette without the tricky flipping action, so really all this fancy translates to -lazy. 😮

But I won't tell anyone if you won't.

Frittata is Italian and translates as "fried" so...that pretty much decided the fact that I would be experimenting with this lovely egg dish where you throw in-all-the-things.

And that is truly what it is all about.

A simple bit of chopping up veggies and shredding of cheese and you are well over half way there to your Italian breakfast dinner!

I sort of emptied the produce drawer in my fridge for this one, and it worked out GREAT.  So, feel free to do the same with your own...and get creative with it!  Think omelette but easier and bigger and get to chopping 🙂

Once you have prepped your veggies, you will just add it to a medium-hot skillet (that is oven safe) and saute them a bit.  They will get all tender and delicious and all those flavors will just begin to meld together.

Side note: I wanted my potatoes soft, so I threw them in the microwave for a minute or two so they were already prepped for the frittata.  This helped cut out time for sauteing...feel free to use your own discretion on that though!

Whisk all the eggs in a bowl with a dash of milk and add to the skillet, covering all the veggies in your skillet.  Pop the skillet in the oven for a few minutes and then add the cheese.

In no time you will have this colorful egg-pie-skillet-fluffy dinner with a blanket of cheesy goodness on top ready for slicing!

Italian Vegetable Frittata

Ingredients
  • 6 eggs
  • ¼ cup skim milk
  • 1 cup grape tomatoes (halved)
  • 1 yellow pepper (diced)
  • 1 cup spinach (chopped)
  • 5 fingerling potatoes (diced)
  • 1 medium onion (diced)
  • 2 green onions (chopped)
  • ¾ cup smoked gouda (shredded)
  • Olive oil spray
  • Cilantro
Instructions
  1. Prep all vegetable ingredients, microwave potatoes for 1-2 minutes until tender, shred cheese and add to a hot skillet with olive oil spray. Whisk eggs and milk and set aside.
  2. Saute ingredients until tender, about 3-4 minutes and pour egg mixture over veggies. Add to a 350 degree oven for 3-4 minutes or until eggs have set. To test, slice the center, if no egg runs, the frittata is done, if eggs are not done, continue to cook.
  3. Remove from oven sprinkle with the smoked gouda and allow to set for 5 minutes. Slice and serve with desired toppings.

It is a beautiful 74 degrees outside and we actually ate on the back porch without sweating last night. In the South, that is the equivalent of the fall in September.

After some unfortunate sickness, in which I will leave out ALL details -because this is a food blog and that would be the opposite of anything you wanted to read on a food blog-I was left craving nutrition for ma’self!

Thus all those veggies, and chicken and HAAALLOOOO veggie noodles?! These may have been around for YEARS, but naturally I hadn’t heard of them until a friend mentioned them the other day. When I spotted them in the store shortly after, I had to give them a go.

There was NOT a taste difference, which had me shocked! And the texture was spot on. These will definitely be reappearing in our kitchen soon.

As my first official fall dish, I wanted this pasta to be full of fall colors, which began my quest in our semi-empty, only-random-half-eaten-containers-left fridge to make this pasta…something! I found that jar of roasted red peppers that I knew would come in handy and decided to blend it up for some sauce action. Turns out, it worked like a DREAM, guys.

[Reminds self to blend more veggies into saucy deliciousness all the time.]

Not that it is meatless Monday or anything, but I almost didn’t add chicken to this pasta.

Yes, it would have still been tasty and full of vegetable love, but that chicken…I kinda forgot how good sautéed chicken can be! The chicken added that extra flavor that really put this pasta dish into the winner column!

Ingredients
  • 1 lb chicken breast
  • 6 oz vegetable pasta penne
  • 7 oz roasted red peppers
  • 4 oz spinach leaves
  • 1½ cup corn
  • 1 medium red onion
  • 5 garlic cloves
  • 2 oz ⅓ less fat cream cheese
  • 1 tsp italian seasoning
  • 1 tbsp. butter
  • 2 tsp. olive oil
  • 1 tbsp. water
  • ½ cup skim milk
  • Parmesan (optional)
Instructions
  1. Cook noodles according to box. While cooking, cube chicken and add to a large saute pan with olive oil. Season with salt and pepper heat until cooked through and golden brown and set aside.
  2. Add garlic, roasted peppers, water and Italian seasoning to a blender or food processor and pulse until smooth.
  3. Add 1 tbsp butter to the same saute pan used for the chicken and add onions. Cook until tender, about 3-4 minutes and add pepper sauce to pan with milk and cream cheese. Stir to combine.
  4. Add corn, chicken and spinach to sauce and stir to combine.
  5. Fold in drained pasta and serve immediately.
Notes
Nutritional Facts are for 1 cup serving size.
Sprinkle Parmesan for added salty flavor.
Parmesan was not included in the nutritional facts.
